People's health concern is getting high. Some places make sushi rice with brown rice. But I don't. I use brown rice 25-30% only. Sushi rice need some moisture and 100% brown rice is too dry to make sushi rice.
I make bento box and daily special box use 100% brown rice with grains and beans, This is easy.
If you concern for health issue, you have to skip sushi rice. Sushi rice contains sugar. And just eat sashimi with less soy sauce and less wasabi.
I ma happy with 25-30% of brown rice in sushi rice.

Taka Update March 12, 2017
It is middle of March. Not much new information right now. Monday is New Zealand fish day. I get Kinme-Dai, Alfonsino from there. Shima Aji, I ordered many times but it came one time only. I also get Tasmanian trout from Australia on Monday.
I get Sole from Japan every Tuesday. Sole has more fat than flounder. This is white meat but texture and fat. And this might be good.
Oyster is still available. I don’t know after April. I do not think it is good when sea temperature is high.
I try to make new special. Just started "Fried Scallop with Mango white sauce" was a smash hit last weekend. I made this 6-7 years ago and came back again. I try to make more something nice spring dish.

Manage Blood Pressure
Reduce Blood Sugar
I think if we eat better, we can control cholesterol, weight and blood pressure.
Make bone strong when get old.
Take calcium? But it is not enough. You have to take something with it.
Magnesium , Calcium and magnesium balance is important for our health. Magnesium activates so many nutrients in the body, but its relationship with Calcium is critical. Their synergistic behaviour is so inter-dependent, they’re increasingly referred to as The Twin Minerals. Eat soybean, cabbage, seaweed and broccoli.
Vitamin D, Getting enough calcium and vitamin D is essential to building strong, dense bones when you’re young and to keeping them strong and healthy as you age. Eat sardine, salmon and mushrooms. And take sunshine some times.
Vitamin K, it keeps calcium in your bones and out of your blood vessels. Eat lettuce, natto (fermented soy bean), seaweed and chives.
Vitamin C, it helps to increase calcium absorption. Eat orange, peppers, kiwi fruit, broccoli and berries.
I highly recommend to taking vitamins and minerals from food, not from tablet or pill. Eat well and be healthy always.
