Taka Update June 05, 2017
My vacation is over. It is once a year. But I did not take any vacation last year. I went to Barcelona and Amsterdam. Restaurant business is normally slow after Memorial Day and it is good time to travel.
Fish is not much changed. Uni Is getting bad because of summer, Maines uni season is over about 3-4 weeks ago, California is short harvest. So we can get uni from Japan only. This is small one and the price is high. And I saw the news about uni in Japan. It is same as California, it means global warming. Stop Trump otherwise we cannot eat uni near future.
We can get Japanese fish tomorrow and Thursday as usual.

Yes, this is June 10-14th here in Atlanta. Many restaurants are fully booked on Saturday night. We have 20 people of Japanese group coming on that day.
Turmeric Extract May Prevent, Even Reverse Diabetes (Type 1 and 2)

GreenMedInfo reports on the findings being described as a “remarkable human clinical study” published in the Diabetes Care journal from the American Diabetes Association, reports that “turmeric extract was 100% successful” in preventing pre diabetes from progressing to type 2 diabetes over the course of 9 months.
Performed by Thailand researchers, the study’s primary object was to assess the efficacy of curcumin, the primary polyphenol in turmeric which gives the spice its golden hue, in delaying the development of type 2 diabetes mellitus (T2DM) in a prediabetic population.
The study design was a randomized, double-blinded, placebo-controlled trial including 240 subjects who met the American Diabetic Association’s criteria for prediabetes. All subjects were randomly assigned to receive either 250 mg of curcuminoid or placebo capsules for 9 months.
“After 9 months of treatment, 16.4% of subjects in the placebo group were diagnosed with T2DM, whereas none were diagnosed with T2DM in the curcumin-treated group. In addition, the curcumin-treated group showed a better overall function of β-cells, with higher HOMA-β (61.58 vs. 48.72; P < 0.01) and lower C-peptide (1.7 vs. 2.17; P < 0.05). The curcumin-treated group showed a lower level of HOMA-IR (3.22 vs. 4.04; P < 0.001) and higher adiponectin (22.46 vs. 18.45; P < 0.05) when compared with the placebo group.”
“A 9-month curcumin intervention in a prediabetic population significantly lowered the number of prediabetic individuals who eventually developed T2DM. In addition, the curcumin treatment appeared to improve overall function of β-cells, with very minor adverse effects. Therefore, this study demonstrated that the curcumin intervention in a prediabetic population may be beneficial.”

2 weeks more? April is over. Weather is very nice for patio season. I get New Zealand Kinmedai coming today. And Live scallop is also coming from Boston area. Uni is 2 kinds ow. Maine small one is coming today. And Canadian big uni is coming tomorrow.
People like Sakura- Masu, Cherry salmon. I sold out last 2 weeks. I ordered it again. And it will come on Thursday, this delivery might be the last one. This is very seasonable and limited.
Seki Saba, Premium mackerel is coming soon. Might be next week. Seki is brand name, Seki saba and Seki Aji are very famous in Japan.
Fresh and safe vegetables
.I started organic farm at my backyard. I planted, Edamame, Okra, Zucchini, Tomato, Pepper, Jalapeno, Chinese nappa cabbage, garlic. We see them.
I use citrus chips, orange grape fruits, lemon for bug prevention. I plant garlic around the farm and this is also bug prevention. I make small fence for deer. I use my hands for weed, not chemical spray. I sprinkle fish dashi pack and egg for natural fertilizer. 100% organic and recycle system, this is our dream right? It is small farm but I will expand it if goes well.

People's health concern is getting high. Some places make sushi rice with brown rice. But I don't. I use brown rice 25-30% only. Sushi rice need some moisture and 100% brown rice is too dry to make sushi rice.
I make bento box and daily special box use 100% brown rice with grains and beans, This is easy.
If you concern for health issue, you have to skip sushi rice. Sushi rice contains sugar. And just eat sashimi with less soy sauce and less wasabi.
I ma happy with 25-30% of brown rice in sushi rice.

Taka Update March 12, 2017
It is middle of March. Not much new information right now. Monday is New Zealand fish day. I get Kinme-Dai, Alfonsino from there. Shima Aji, I ordered many times but it came one time only. I also get Tasmanian trout from Australia on Monday.
I get Sole from Japan every Tuesday. Sole has more fat than flounder. This is white meat but texture and fat. And this might be good.
Oyster is still available. I don’t know after April. I do not think it is good when sea temperature is high.
I try to make new special. Just started "Fried Scallop with Mango white sauce" was a smash hit last weekend. I made this 6-7 years ago and came back again. I try to make more something nice spring dish.

- A compound found in green tea could have lifesaving potential for patients with multiple myeloma and amyloidosis, who face often-fatal medical complications associated with bone-marrow disorders, according to a team of engineers at Washington University in St. Louis and their German collaborators.
- Jan Bieschke, assistant professor of biomedical engineering at the School of Engineering & Applied Science, studies how proteins fold and shape themselves, and how these processes can contribute to a variety of diseases. He says the compound epigallocatechine-3-gallate (EGCG), a polyphenol found in green tea leaves, may be of particular benefit to patients struggling with multiple myeloma and amyloidosis. These patients are susceptible to a frequently fatal condition called light chain amyloidosis, in which parts of the body’s own antibodies become misshapen and can accumulate in various organs, including the heart and kidneys.
“The idea here is twofold: We wanted to better understand how light chain amyloidosis works, and how the green tea compound affects this specific protein,” Bieschke said.
Bieschke’s team first isolated individual light chains from nine patients with bone marrow disorders that caused multiple myeloma or amyloidosis, then ran lab experiments to determine how the green tea compound affected the light chain protein.
Bieschke previously examined EGCG’s effect in both Parkinson’s and Alzheimer’s disease, and found it prevented dangerous buildups of protein present in both diseases. His team had a similar conclusion in this study: In the lab using samples from bone marrow patients, the EGCG transformed light chain amyloid, preventing the misshapen form from replicating and accumulating dangerously.
“In the presence of green tea, the chains have a different internal structure,” Bieschke said. “The ECGC pulled the light chain into a different type of aggregate that wasn’t toxic and didn’t form fibril structures,” as happens to organs affected by amyloidosis.
While Bieschke is gaining a greater understanding at the intracellular processes involved, his partners at the University of Heidelberg are working in tandem with him, running clinical trials.
“My group is looking at the mechanism of the protein in a test tube; we are studying how it works on a foundational level. At the same time, clinical trials at the Amyloidosis Center in Heidelberg, with Alzheimer’s in Berlin and with Parkinson’s in China examine the process in people. We all want this compound to work in a patient.”
The research was recently published in the Journal of Biological Chemistry.

Today is Tuesday and we can get Japanese fish. Kinmedai is coming from NZ. I dropped the price of it. Japanese Kinmedai is high price but NZ is not bad. Shima Aji is also coming from NZ but not this week.
Tuna is same as usual, Indonesian Bluefin. This is frozen tuna and I treat as zuke way and make delicious. I buy big eye tuna when I get good one.
Uni is available. It is from California. There is no uni delivery until Thursday. Japanese uni is coming on Thursday.
Live scallop is coming today. This is from Boston.
I start premium Hamachi, yellow tail. It is from Japan. Better taste and affordable price, you have to try.
Friday and Saturday business are not easy. People come one time around 7-8pm. We added tables recently and tried to solve this issue. The seating time is getting shorter than before. But this is a good thing. 6-7 months passed after opened and people finally understand what is Taka Sushi. Thank you so much.

We sell Grilled sea bass or black cod, The process of making is same. We use miso, sakelee, sugar, sake, mirin and honey. Sakelee is sake dust, I explain to customers it is just like coffee dust in the coffee maker filter, But this sakelee is amazing. We dump coffee dust but we use sakelee.
And I make pickles with sakelee and miso.

Fish and More
Atlanta Falcons is doing very well this season and finally they can go to Houston. We will see it. Our business is same as Falcons. If the weather is nice and Falcons win, people mind is very positive and try to go out and spend money.
Tuna? I carry Indonesian blue fin. This is the best for me now. I almost give up big eye tuna and tasteless yellow fin. I do zuke, marinated with sake, soy sauce and dashi broth. And I can make tuna taste better.
Monday is bad day? It is not bad. I get Kasago, Scorpion from New Zealand. I get Uni from Maine and live scallop from Boston.
What is freshness of fish? It does not matter. I feel it is getting same as beef. Aging is important sometimes. I saw TV show in Japan. 18 days aging wild caught yellow tail or 14 days aging wild caught blue fin tuna are good examples. I used to buy big eye tuna and was good taste after 7 days.
This week fish supply is not bad. I have all fishes so far.
Black garlic can save many people.
