And we have spaghetti on lunch menu. A new office just open upstairs and they have 45 people working.
I expect lunch business.

Black Garlic, Super Food!

This is house made black garlic. This is not black originally.
I put in rice cooker for 2 weeks and make it.
This is fermented garlic. White turn to beige and turn to brown and turn to black.
This black garlic power is 10-50 times more than white garlic.
Must eat for your health.
It might work for diabetes, One of my customers is really happy with this garlic.

Pasta at Japanese Restaurant?


This is called Mentaiko Pasta, spicy cod roes pasta.
It is Italian but it is Japanese.
Mentaiko is very popular in Kyushu, Fukuoka area. Cod roes soak in red pepper and leave it, may be.
It is good with steamed rice, pasta, calamari, many ways.

Fish and More
It is almost the end of 2016. Tuna is big change. I used to buy big eye tuna but I could not get good one. So I started to buy Yellow fin tuna. Do I like yellow fin tuna? Not much. And I buy Blue fin tuna from Asia now. It is frozen product but the quality is high. I am checking how my customers say about this tuna.  Frozen tuna is very common in Japan. And this is the good way to keep same quality of tuna all the time.
Uni is not bad but very few from California. I get Maine uni most of the time. And I buy occasionally buy Japanese uni, actually it is from Russia.
Live scallop is fine in winter time. The quality is high enough.
I carry typical winter items. Namako, sea cucumber is our winter dish. I will carry it by the end of year. And shirako, cod testicular is available as usual.

New menu
We have Kids friendly menu now. It is because of our current location. Our main target is family now.  We make ½ portion ramen, chicken and more.
We start to carry Sapporo Beer. And we will finish to sell Kirin beer. We installed a new Hoshizaki Beer server machine. This is new technology, we can keep beer keg in room temperature. Beer goes through the machine and cold beer comes out. The foam is same as Japan, you can enjoy creamy foam.

Holiday operation
It is same as usual. We are opened Christmas Eve, we are closed Christmas Day. We will close on 26th Monday lunch but will open dinner. We will close New Year Day. And we will close 2nd lunch but will open dinner. Please bring your families and friends.

New location
We opened our new location in Sandy Springs on May 23rd. 6 months passed and the business is very up and down. It is good sometimes and terribly bad sometimes. But I feel I find our new direction and am moving forward with positive thinking. Many customers ask me “How is the business? “ And my answer is very honest, “Yes, it is yes or no, up and down daily. “  I do not think all people in town know we are here. And we get new customers every week and this is a good sign to grow. I go to customers table more than ever and try to talk. Owner chef is a top sales person always.

I made this yesterday.
Minestorone, Italian tomato and vegetables soup, Sardine fish ball tempura, Steamed vegetables and hijiki seaweed rice.
Side dishes are potato salad, braised daikon radish, pan fried gobo roots and hijiki salad.
It is well balanced meat and fish and vegetables. $9.00 is really a good deal. The quantity is limited.

Sea cucumber, Winter dish is coming next week.

Have you had sea cucumber? It is very strange creature. One of good things is it is good for your body. Great nutrition and live vitamins and minerals.
It is coming next weekend.

Cancer Prevention Potential

Eating sea cucumber may help prevent the growth and spread of cancer cells. This is because sea cucumbers contain high amounts of compounds known as triterpene glycosides, which have antitumor activity. According to a study by Chinese scientists published in August 2005 in “Cancer Biology & Therapy,” sea cucumbers also contain a compound known as philinopside E, or PE. PE inhibits the formation of blood vessels that supply nutrients to tumors. This suppresses the growth and proliferation of such tumors in your body.

Anticoagulant Activity

Blood clotting helps prevent excessive bleeding when you are injured. However, clots can also form inside your blood vessels even when you have no obvious physical injury. This can lead to potentially fatal conditions such as pulmonary embolism - - where the blood clots accumulate in lungs - - and restrict the flow of blood. Sea cucumbers contain a compound known as chondroitin sulfate. A study by Brazilian scientists published in September 1996 in the “Journal of Biological Chemistry” found that chondroitin sulfate has anticoagulant activity.

Anti-Inflammatory Activity

Sea cucumbers have potent anti-inflammatory effects, which may help alleviate pain in patients with conditions such as arthritis. A study by Malaysian scientists that was published in October 2011 in “Marine Drugs” found that sea cucumber supplements reduced inflammation in both male and female rats. This sea animal contains compounds such as mucopolysaccharides, chondroitin and glucosamine, which can help relieve arthritis disorders. Such compounds help in the regulation of the balance of certain lipids known as prostaglandins. Patients with rheumatoid arthritis usually have high concentrations of certain prostaglandins, according to a study published in 2008 in the “American College of Rheumatology.”

Wound Healing

Eating sea cucumber or its extracts may have therapeutic effects such as speeding up wound healing. It does so by facilitating the formation of new tissues within a short time -- a property that is believed to stem from the ability of a sea cucumber to regenerate its own body tissues quickly when it is injured. According to the October 2011 "Marine Drugs" study, this is believed to be facilitated by certain fatty acids, such as arachidonic acid, present in sea cucumber.

Diabetes Prevention

 I think this is the one.
Sashimi, tofu, black garlic, brown rice, tomato, okra, hijiki seaweed, konbu (kelp), broccoli, the perfect combination for diabetes.
We tried yesterday because of World Diabetes Day. But we did not sell well, actually. It's OK, I will do this again next year.  TAKA

Fish and More
The last newsletter was September 29, I was busy for Instagram daily. My followers are growing and more than 430 people now. I need to get 600 people by the end of the year. This is my target. What I need to do? I have to make good dishes, attractive dishes, surprise dishes and funny dishes and more. I do my best.
Let’s talk about fish. Tuna supply is 50/50. I get big eye tuna sometimes, and I get yellow fin tuna sometimes. 
Uni supply is not bad. I get it from Maine, California and Japan. Japan means Russian uni actually. The price is high. And it was good in summer because of shortage. But I can get uni very constantly now and I don’t want to buy at high price.
Live scallop is finally coming back. It is autumn and early winter, scallop quality is really good now.
Japanese fish? Sawara, Spanish mackerel is in season. I buy this bi-weekly. I will start Ankimo, monkfish liver pate, very soon. Shirako, cod testicular season is also coming soon.
I started oyster in September. It sold well. I go with Japanese way. It is with light vinegar and pickles wasabi. I need to think of a new cook ways of oyster in winter.
Stone Crab season is also started. I just sold some last week. It was really good.
Kids menu is available now. This is not Buckhead anymore, yes we are in Sandy Springs. We carry kids friendly items. You can bring your little family before 7pm. I need to match Sandy Springs family needs.
Sandy Springs sales Tax is 7%, 1 % lower than City of Atlanta. You can save your money. And you get more volume than City of Atlanta. And the price is lower than City of Atlanta. This triple effect is good for customers.
Holiday is coming next week. We will close on 24th, Thanksgiving Day and Friday lunch on 25th, enjoy your family time and shopping. And please come to Taka if you are tired to eat turkey leftover. We are available Friday night and Saturday night.
Parking issue? Parking spot is really hard to find at weekend. Please go back to the restaurant. There are many spots just front of the apartment.

Good tuna is available this weekend.

This is big eye tuna. Tuna is basically 3 kinds.
1) yellow fin  you eat this as steak, grilled tuna and sushi, sashimi
2) big eye  you eat this as sushi or sashimi
3) blue fin  you eas this as sushi or sashimi
Blue fin is top ranked but hard to get it. And the color changes quick and not easy to keep it.
Big eye is very popular but hart to get it. But it is easier than blue fin. The important thing is fat, How much fat is in it? That's the key point. See the pic, the pink part is fat, skin side. This is the best part,

And this is big eye toro nigiri, Fish fat is really good. Tuna has a lot of DHA.
This is between chu-toro and Ko-toro.
Chu means medium, Ko means small. This tuna's toro is not like chu-toro but has some fat, So I judge like this. I ate this last night and it was very delicious.
Oh-toro, big fat is too much for me. It is just fat and not tasty for me.

This tuna is available all this weekend.

Great way to eat tuna

 This is big eye tuna and I brush a special sauce, Nikiri soy sauce. And I place pickled wasabi on top of tuna.  Juts eat straight without dipping soy sauce.
Fish needs soy sauce but rice does not need soy sauce. Remember this work.

Today is the Day, National Sushi Day

Everyone, Today is National Sushi Day,  It is in Japan, but I want to expand to all USA and all over the world.
