Base of Tonkotsu ramen



I bought Tonsoku, Pork Feet the other day
I cooked meat and served.
So, this is the broth from Pork Feet.
Tonkotsu Ramen is very popular in NYC area.
And my question is why American people suddenly started to eat this kind of greasy food.
As I know try to avoid to eat fat part of meat,
Asian people like chicken feet, chicken skin, pork skin, pork feet and more.

I know American people like Hamachi, Toro, Salmon. Those are all fatty fish and high calorie
I personally like meat fat, it makes nice broth.
But greasy ramen is too much for me.
It is OK if I eat monthly.
Maybe people like to eat but they don't want to see behind the scene.
