Great Tuna is available for the end of 2012

 
We normally do not have good tuna at the end of year. But this year is different.
Our supplier called me yesterday for this tuna. This is really great.
 
Toro is very thick and well fat.

This is toro part, no damage, clean, beautiful color, no question, just eat.

This tuna is available until December 31, 2012. Thank you God and big nature.

New Fish Kasago, Rock Fish

We cut Nisin, Herring and replaced to Kasago, Rock Fish.
 
 
The name of Kasago is called in Tokyo arean. Hiroshima in my home town say Mebaru.
The season is from winter to spring but can eat whole year.
 
 
It is good for sashimi, fried, blaised, nabe and more.
I like this texture and meat is clean.

New sushi bar is ready to serve.

It's holiday and the most wonderful time of the year. Who care about that? I don't care. We were closed from Sunday to Tuesday and made new sushi bar. We peeled off surface bamboo topping and plywood. It was blue when we opened the restaurant in 2002.

Then, I went to Home Depot and bought ply wood.


I cut the wood for size of sushi bar and nailed it. I did not use any glue. I might change again in the future.


Then, I applied new bamboo topping with glue. I started to do from behind. That was a mistake. Customer side needs to show well. So, I took off all of them and started again.

That decision was right. The ending was under the sushi case and people did not see the ending part.
Then I made side part and finished.


The cost is around $200. It looks good, isn't it? This was my vacation, my holiday. I really enjoyed with high quality job and felt good.

Fish delivery and more
We received good tuna yesterday. It was big eye tuna, stomach side, 52 lbs. The condition was better than last week’s one. Uni was sold well yesterday and I ordered for today. This supply is not bad.
Nisin, Herring will be the last supply for this week delivery. I will switch to Kasago, Rock fish. I tested it last week. The meat is white and lean, had nice texture but not chewy.

Closing Information
We will be closed from December 23rd to 25th. I am not going to anywhere this time.

 My Weight Control
This is good rebound. My weight was 176.6lbs this morning. I still eat fruits for breakfast, salad for lunch, salad and something for dinner.

I added Japanese sweet potato for my lunch. I just steam and eat with no sugar. Sweet potato nutrition is great as brown rice. Read below.
Calorie and fat-- -According to the USDA Agricultural Research Service Nutrient Data Laboratory, an average-sized raw Japanese sweet potato, approximately five inches long and weighing 130g -- contains about 113 calories. None of these calories are provided by fat. Sweet potatoes contain no fat, saturated fat or cholesterol.

Carbohydrates--- Japanese sweet potatocontain approximately 27g of carbohydrates. This carbohydrate value comes from three sources: dietary fiber, sugars and starch. Japanese sweet potatoes contain approximately 4g of dietary fiber, for about 12 percent of the daily recommended requirement for dietary fiber in a healthy diet, according to the World's Healthiest Foods site. The 5g of sugars in Japanese sweet potatoes are predominantly sucrose and glucose, with a small amount of fructose. The USDA site reports that the potatoes contain about 17g of starch.

Protein--- Japanese sweet potatoes provide approximately 2g of protein. While trace amounts of all essential amino acids are present, the potatoes contain the compounds threonine, leucine, phenylalanine, valine, alanine and serine in the largest amounts. 
Vitamins--- Japanese sweet potatoes are a rich source of a variety of vitamins essential for optimum health, including vitamins A, C, E and B6. According to the USDA, Japanese sweet potatoes contain 11,062mcg of the beta-carotene form of vitamin A, for 202.2 percent of daily recommended intake of vitamin A. One average-sized sweet potato provides nearly 30 percent of the requirement for vitamin C and about 12 percent of the vitamin B6 requirement. These vitamins are thought to act as powerful antioxidants, preventing cellular damage from free radicals in the body. Because Japanese sweet potatoes are so high in vitamins, they're often recommended as an essential part of a healthy diet.
Minerals--- Potassium, calcium, sodium, phosphorus, manganese, copper, iron and magnesium are all minerals that Japanese sweet potatoes contain in large amounts. With 438mg of potassium in every average-sized potato, Japanese sweet potatoes provide 10 percent of the daily magnesium requirement. They provide 25 percent of the daily need for manganese, about 12 percent of the copper requirement and 39mg of calcium.

It is good for diet, that’s why I eat this every lunch. I think we only can buy this at Asian grocery stores. How to eat? Do not peel skin, wash it and just steam it about 15- 20 minutes. You can also boil it. And just eat straight, no wasabi no soy sauce. You can bake it, too. It is good with sugar or butter, but don’t try, just eat straight. It is sweet enough. Have a great holiday. I think this is the last one of this year.

I received a big tuna again. It was 52 lbs and stomach side.


Toro is better than last week's one.



I think I will not get good one any more this year. New Year is coming and everybody goes home from the ocean.
It's simple reason. People want to stay home with family and tuna supply will be short for 2 weeks.

What a good day today! Today is 12/12/12, December 12th, 2012. I hope something good happens to you.
I received a big tuna again yesterday. I posted it on my blog. It is big eye tuna and stomach side, the weight is 50 lbs. To be honest, this tuna is not the best. The tuna 2 weeks ago was really good. But still have toro and can make Negitoro Don.
Winter season is not easy for tuna supply. I think the supply is getting bad until March. So, I cannot complain about this tuna. Not the best but not bad that I feel.
Uni is not available so far. Our supplier says it will come on Thursday or Friday. The weather in CA was really bad last week as you knew. Rain in CA is bad sign for uni catching. All other fish are same as usual.

My Weight Control
It’s rebound. My weight was 167.4 lbs. yesterday but came back to 170.00 this morning.
I ate soba noodle with vegetable last night. And I ate Greek yogurt and a piece of chocolate later night. I am still eating salad for my lunch. But I added chicken yesterday. That was my mistake.

This week's Tuna

I just received this tuna. If the last time tuna is AAA, this tuna is A+. Not bad but not excellent.
Winter is not easy to get good tuna.
 
I have toro but not much toro, It's OK for selling chu-toro.
I normally charge good one $14 for nigiri sushi but this one si $11.50.
I wait a couple of days and see how color change.

I received big eye tuna yesterday but it was not like last week one. That was the best. I have Namako, sea cucumber. It is very very chewy and most people hate it but have good nutrition. It is called “Ocean Ginseng”. I always say “It is good for your body”. We normally eat this for New Year. I used to eat a lot when I was child. All other fish are same but Uni is short because of bad weather in CA.

 My Weight Control
I posted on my blog about this. I am on diet. Many people say to me that I am not fat. But I am overweight obviously. My weight was 176 lbs. after I came back from Hawaii. So, I decided to lose weight. I use “Eat to Live “program this time. You might know the name of Dr. Joel Fuhrman. I saw him on GPB the other day. You can see his video at YouTube, too. So, I eat variety of fruits and fresh squeezed grapefruit for breakfast. Then I eat soba noodle with salad for lunch and huge amount of salad for dinner. I don’t take sugar, oil, fat, carbohydrate basically. My weight was 168.4 lbs. this morning. I am in good shape now and look for 165 lbs. I was 165 lbs. last year. I was 160 lbs. 3 years ago. When I was 160 lbs., I set the weight limit as 165 lbs. And I was lazy and went over the limit. So, I decided to set a new limit as 170 lbs. when I was around 165 lbs. And I was lazy again and went over 170 lbs. One of my customers gave me “Eat to Live” and I read during a trip to Hawaii. It was very impressive book. Broccoli has more protein than beef, and Bok Choy has more calcium than milk. We don’t need to take animal protein to live well. I just give some rest on Sundays. I can drink alcohol on Sundays and eat whatever I like on Sundays. But I still don’t have ice cream in my fridge. Ice cream is like poison. They have a bunch of sugar and fat. It’s really tasty but I wait until my weight reach 165 lbs.


Walnuts May Boost Semen Quality
Young, healthy men who added a daily dose of walnuts to their usual diet had improved semen parameters, a randomized trial showed.
After 12 weeks, those who ate walnuts had better sperm vitality, motility, and morphology compared with those who avoided tree nuts altogether (P≤0.03 for all), according to Wendie Robbins, PhD, of the University of California Los Angeles, and colleagues.
Walnuts also were associated with improvements in serum omega-6 and omega-3 fatty acids, the researchers reported online in Biology of Reproduction.
"Whether adding walnuts to the diet will go beyond the shifts in sperm parameters as seen in this study to improving birth outcomes for men within fertility clinic populations or in the general population is not yet known and will require further research," they wrote.
Polyunsaturated fatty acids -- which are found in high concentrations in fish, fish oil supplements, flax seed, and tree nuts -- have been shown in animal and human laboratory studies to be involved in sperm maturation and membrane function. However, not all clinical studies of male fertility have shown differences in polyunsaturated fatty acid concentrations between fertile and infertile participants.
Nuts, and walnuts in particular, have a high concentration of alpha-linolenic acid -- a natural source of omega-3 -- in addition to omega-6 fatty acids, antioxidants, and micronutrients like folic acid.
Robbins and colleagues set out to explore whether adding walnuts to a Western-style diet would improve semen quality. They randomized 117 healthy men ages 21 to 35 (mean age 25) with no known history of infertility to add 75 grams of whole-shelled walnuts a day to their usual diet or to continue their usual eating habits while avoiding tree nuts.
The walnuts were supplied by the California Walnut Commission, which provided funding for the study.
At baseline, the two groups were similar in age, education level, race, body mass index (BMI), body weight, and physical activity levels. During the 12-week study, there were no significant changes in BMI, body weight, or physical activity in either group.
Sperm parameters improved in the group that consumed walnuts (but not in the control group), resulting in significantly better sperm vitality, motility, and morphology.
Serum fatty acid profiles were similar in the two groups at baseline, and only the participants eating walnuts had significant increases in omega-6 (P=0.0004) and omega-3 (P=0.0007) fatty acids through 12 weeks.
The only omega-3 that increased was alpha-linolenic acid (P=0.0001).
Despite the change in serum fatty acids, the fatty acid profile in the sperm did not show changes within each group. However, a nonsignificant increase in eicosadienoic acid in the walnut group, coupled with a nonsignificant decrease in the control group, resulted in a significant between-group difference (P=0.02).
There were no differences between the groups in sperm aneuploidy for chromosomes X, Y, and 18 at baseline or at the end of the study, but in the walnut group there were significant decrease in sex chromosome disomy and sperm missing a sex chromosome (P≤0.01 for both).
Increasing amounts of alpha-linolenic acid in the sperm were associated with a lower proportion of sperm missing a sex chromosome and percentage of sperm with any numerical chromosomal abnormality at the 12-week visit (P≤0.01 for both).
The authors acknowledged that the study was limited by the collection of blood specimens for hormone analysis at all times during the day.

Namako, Sea Cucumer is available.

When I see namako, I feel it's end of the year.
 
This is just came ffrom Japan. It's very dirty. I use salt ansd rub on cutting board many times.

We normally eat namako as sunomono, vinegar sauce. And we don't eat straight. We cut thin and small. It is very chewy and that's a problem.
But this creature is really good for your body. Don't chew, just swallow.Look at below.

I made mochi on Sunday.

 
It's end of the year and need to welcome New Year. This is our tradition, making mochi, pounding sweet rice.
 
We use a machine now and easy to make it. First steam sweet rice.


Second, machine has a fin at bottom and trun around. So, rice trun around and can make sticky.

After that, take mochi out from the machine and make ball size. We put sweet red bean in some.

We used to make mochi like this.  Steaming sweet rice.


 Before pounding, smash slow.

 Then pound rice and tunr over rice each time.
