Banyan, Riesling, Santa Luchia Highlans Monterey CA 2009

An austere balance of acidity, fruit and minerality. Citrus, peach and spice flavors with a flinty mineral finish and texture. Over time some of these floral components to give away to more petrol-type characteristics.

Riesling is not for black people. Riesling is great wines fro seafood and sushi.
But white people or GA white people don't like much. 90 % of our Riesling customers are black people. Atlanta's Black people % is 36% I think.
We also have Austria Riesling. I try to buy less sweet Riesling, dry Riesling is great.

Can Feixes, Blanc Selccio Spain 2010
The Penedes region of Catalunya is best known for sparkling Cava but the local grapes can make some truly stunning still wines as well. Can Feixes is composed of 40% Parellada, 30% Macabeo, 20% Chardonnay and 10% of the rare Malvasía de Sitges. Like a wine version of a Gin & Tonic, Can Feixes has a bit of quinine-like minerality along with a refreshing blast of lime zest. A nice waft of of floral perfume adds to the complexity of this bright, food friendly white wine.

Spanish wine with Sushi?  Spanish wines are rising Sun. We just don't know. I don't know, you might not know.This white blend is well balanced and good easy drinking wine.

Chateau Guiraud, Bordeaux Blanc is a kind of similar wine. This is not new. We have been selling almost 6 months. It sells better than before. People getting understand,

I feel 50% of people are just happy with Chardonnay, Sauvignon Blanc and Pinot Grigio.
There are so many good wines, we must try because life is short.

Those people really like it and ask me make all year around but I do not make in winter.

It is same as Ankimo, monk fish liver pate.

So far, no information about uni. We had 2 times last week. That was good.

Big eye tuna is coming on Wednesday. Our supplier say this tuna has slight toro.

Some fish are not available but those fish are coming on Thursday.

We also get some new fish from Japan on same day.

These are Hotaru Ika- Firefly squid, Kansaba- Winter mackerel, Komochi Iidako- Baby octopus with roe, Ainame- Fat Greenling and Mana katsuo- Pampus.

You have no idea about these new fish. I know some and don't know some.

Have to see them on Thursday.

Weight Control and Golf

It was really terrible golf last Sunday. I shot 3 digits. I had no idea when was the last time I shot this kind of bad scores.
I had no focus, no control and many 3 pats. Shame on Taka, I know that, don't say that.
I need to come back for revenge this Sunday but may be cannot play after 4 straight rainy days. My frustration is very high. I was very good mood on the way to the golf course. And I had a very bad feeling on the way home.
Now I feel same way as many top players miss cut sometimes at PGA tour.
Yes, we are human beings. Our business is good, I am making money, everything is good right now. We cannot be perfect. My good golf game is coming back any way in the future.

Vegetables, fruits, grains reduce stroke risk in women

Swedish women who ate an antioxidant-rich diet had fewer strokes regardless of whether they had a previous history of cardiovascular disease, in a study reported in Stroke: Journal of the American Heart Association.
“Eating antioxidant-rich foods may reduce your risk of stroke by inhibiting oxidative stress and inflammation,” said Susanne Rautiainen, M.Sc., the study’s first author and Ph.D. student at the Karolinska Institutet in Sweden. “This means people should eat more foods such as fruits and vegetables that contribute to total antioxidant capacity.”

Oxidative stress is an imbalance between the production of cell-damaging free radicals and the body’s ability to neutralize them. It leads to inflammation, blood vessel damage and stiffening.

Antioxidants such as vitamins C and E, carotenoids and flavonoids can inhibit oxidative stress and inflammation by scavenging the free radicals. Antioxidants, especially flavonoids, may also help improve endothelial function and reduce blood clotting, blood pressure and inflammation.

“In this study, we took into account all the antioxidants present in the diet, including thousands of compounds, in doses obtained from a usual diet,” Rautiainen said.

Researchers collected dietary data through a food-frequency questionnaire. They used a standard database to determine participants’ total antioxidant capacity (TAC), which measures the free radical reducing capacity of all antioxidants in the diet and considers synergistic effects between substances.

Researchers categorized the women according to their TAC levels — five groups without a history of cardiovascular disease and four with previous cardiovascular disease.

For women with no history of cardiovascular disease who had the highest TAC, fruits and vegetables contributed about 50 percent of TAC.

Other contributors were whole grains (18 percent), tea (16 percent) and chocolate (5 percent).
The study found:

• Higher TAC was related to lower stroke rates in women without cardiovascular disease.

• Women without cardiovascular disease with the highest levels of dietary TAC had a statistically significant 17 percent lower risk of total stroke compared to those in the lowest quintile.

• Women with history of cardiovascular disease in the highest three quartiles of dietary TAC had a statistically significant 46 percent to 57 percent lower risk of hemorrhagic stroke compared with those in the lowest quartile.

“Women with a high antioxidant intake may be more health conscious and have the sort of healthy behaviors that may have influenced our results,” Rautiainen said. “However, the observed inverse association between dietary TAC and stroke persisted after adjustments for potential confounders related to healthy behavior such as smoking, physical activity and education.”

For the study, researchers used the Swedish Mammography Cohort to identify 31,035 heart disease-free women and 5,680 women with a history of heart disease in two counties. The women were 49-83 years old.

Researchers tracked the cardiovascular disease-free women an average 11.5 years and the women with cardiovascular disease 9.6 years, from September 1997 through the date of first stroke, death or Dec. 31, 2009, whichever came first.

Researchers identified 1,322 strokes among cardiovascular disease-free women and 1,007 strokes among women with a history of cardiovascular disease from the Swedish Hospital Discharge Registry.

“To the best of our knowledge, no study has assessed the relation between dietary TAC and stroke risk in participants with a previous history of cardiovascular disease,” Rautiainen said. “Further studies are needed to assess the link between dietary TAC and stroke risk in men and in people in other countries, but we think our results are applicable.”

I ordered new fishes for next week. 4 different fishes are coming.

Tuna? it is also same, Ok tuna is available. Winter need to pass away. We get better situation in spring.

Weight Control and Golf

Oh, No. I have not played golf for 2 weeks. The golf course is my church, I should go there every Sundays. Bad weather disturbed playing.

But I will play this Sunday. We have a small tournament.

Tomato juice is selling well in Japan.

It is because of last week news, tomato works for diet, tomato burns fat.

See? Japanese people are crazy. I say they are health fetish. It was baby lamb before, banana before. They do not have their policy. If someone says "This is good." , they just buy and try.

Relationship between Intelligence and Body Symmetry

This is from Virginia Commonwealth University research.

Intelligent people are slightly more symmetrical than their counterparts, according to a new Virginia Commonwealth University study published online for the journal, “Intelligence.”

The study, “Smarter People are (a bit) More Symmetrical: A Meta-Analysis of the Relationship between Intelligence and Fluctuating Asymmetry,” summarized empirically 14 past studies that included 1,871 people. Estimates of the correlation between intelligence and body symmetry ranged from .12 to .20, indicating that intelligent people were slightly more symmetrical than less intelligent people on average. Authors of the study are George Banks and John Batchelor, who are doctoral candidates in management in the VCU School of Business, and Michael McDaniel, Ph.D., professor of management at VCU.

“So far cognitive ability has been demonstrated to be the best predictor of job performance,” Banks said. “This article provides evidence for one potential cause of differences in individual intelligence.”

Intelligence is an important predictor of health and mortality, and research suggests that intelligence may be part of a general fitness factor that increases reproductive success and general survival. If this is the case, the VCU researchers reasoned, a relationship should exist between intelligence and other reliable indicators of fitness such as body symmetry. Body symmetry is measured by comparing the left and right side of the body in the lengths and width of bilateral body parts such as fingers, toes, hands and feet.

There is no soap, just soak in the water and scrub.
Oh my God, the dirty spot is gone!
This is really works.

I think this product is made with micro fiber things.

If you go to Car Wash with hand wash, they use micro fiber cloth.

If you go to Costco, the yellow towel is micro fiber.
Amazing! I give it AAA.

Shi Shi To, Japanese pepper

Some Americans know this pepper.
This is not like Jalapeno spicy and nice medium spicy pepper.

I normally grill on the fried pan with no oil, then go in to marinated sauce.
This marinated sauce is very light. Water, white soy sauce, Usukuchi soy sauce and mirin.

You might know Spinach Ohitashi dish. It is almost same.

It is really good with beer.

We received blue fin tuna again on Monday. I knew everybody was busy for Valentine's Day and I did not notice. This tuna is still available.

Uni is not available because of bad weather in CA. Please check the weather in CA before you come to Taka. It comes when they have good weather but comes 2-3 days later.

Mirugai, Giant Clam is also not available. Our supplier told me that the buying cost was too high to buy. Chinese buyers don't care about price and the price is getting high. I am not sure when it comes. Who has money now? Yes, it is Chinese.

Unagi price is also very high. You know it is frozen BBQ style and comes from China.

The reason is fry(baby fish) price is 10 times higher than last year because of shortage.

Our cost will be higher $20 per box in 2 10 days. So I bought 2 cases and kept in my house. I feel like the price changes almost every 2 months. If I have extra money and a huge freezer, I buy tons of frozen eel instead buying stocks or gold. Unagi price will be high more than 20% every year. This is good investment, isn't it?

All other fish is fine.

Potent PPARα Activator Derived from Tomato Juice, 13-oxo-9,11-Octadecadienoic Acid, Decreases Plasma and Hepatic Triglyceride in Obese Diabetic Mice

Dyslipidemia is a major risk factor for development of several obesity-related diseases. The peroxisome proliferator-activated receptor α (PPARα) is a ligand-activated transcription factor that regulates energy metabolism. Previously, we reported that 9-oxo-10,12-octadecadienoic acid (9-oxo-ODA) is presented in fresh tomato fruits and acts as a PPARα agonist. In addition to 9-oxo-ODA, we developed that 13-oxo-9,11-octadecadienoic acid (13-oxo-ODA), which is an isomer of 9-oxo-ODA, is present only in tomato juice. In this study, we explored the possibility that 13-oxo-ODA acts as a PPARα agonist in vitro and whether its effect ameliorates dyslipidemia and hepatic steatosis in vivo. In vitro luciferase assay experiments revealed that 13-oxo-ODA significantly induced PPARα activation; moreover, the luciferase activity of 13-oxo-ODA was stronger than that of 9-oxo-ODA and conjugated linoleic acid (CLA), which is a precursor of 13-oxo-ODA and is well-known as a potent PPARα activator. In addition to in vitro experiment, treatment with 13-oxo-ODA decreased the levels of plasma and hepatic triglycerides in obese KK-Ay mice fed a high-fat diet. In conclusion, our findings indicate that 13-oxo-ODA act as a potent PPARα agonist, suggesting a possibility to improve obesity-induced dyslipidemia and hepatic steatosis.

2002 - 2012 means 10 years. It is a long way but is very short time. It is just like a brick house. It needs to stuck up high quality of food, services every day. 10 years of bricks are really high and strong enough against any kind of enemies like bad economy, high food cost.

We are doing good because we have so many great customers. If I have bad customers, I cannot do much challenges. Many customers try omakase which is chef choice tasting course menu, daily specials. And your adventurous spirits make me grow.

I am planning making a book called sushiandpassion. I just picked all fish pictures and articles from my blog. I have to correct bad English to good English, need a good makeup but not plastic surgery. Hopefully it will come before holidays. I have 114 pages of data and need to organize.

Blue fin tuna is available but,,,.

I received blue fin tuna this morning.
But Valentine's Day is coming tomorrow.
Most of our regular customers are not coming.
Many people go one rank higher restaurants on that day.
Any way, this is almost 30 lbs. and can sell until Friday.

Our grocery supplier told me about raising Unagi price.

It is shortage of babies and the price of babies are 10 times higher than last year.

10 times? I am not joking. I am serious. So, adult size of unagi price is also very high.

Oh, it's crazy everything.

One more story, I have not gotten Mirugai, Giant Clam for 2 weeks.
Our supplier told me that the price is too high to buy.
The reason is China buying power. Chinese buyers buy it high price and we cannot buy. This is also stupid and ridiculous.

But it is true. China has more money than us.
Japanese stores in Japan expect their money. Chinese tourists come to Japan and buy so many things like electronics, cosmetics. They are not cheap people any more.

Good news, uni is available. The supply is really good right now. And tuna is same situation. Anyway, winter season is not good for tuna.

Most of Japanese fish came yesterday except Iwashi and Kiss. They will come on Thursday.

I tried Namako, sea cucumber and Nore Sore, sea eel babies. Both of them were good. So I decided to get them this month. They are coming on Thursday again.

Trying something new is hard. 50% of new trials might be bad. But if the other 50% are good, we need to say success.

Same as my specials. I create many specials but never satisfied 100%. But I get smash hits sometimes. Stacking up smash hits makes points and scores.

There are 2 types of customers. We explain Daily Specials. They listen and order from the menu as usual. Let's say 80% of customers order exact same orders every time. This makes our stable business. And 20% of customers order some specials after listen. Then some of them are happy with it and some are not happy.

We do not charge it if you do not like. I always see how our customers like specials. If they leave the food more than 50%, that means they do not like and I do not charge.

I admit it and get ideas for next specials. If I go to foreign countries and I order something I never have and cannot eat, I leave the food.

This is pretty much natural thing. And I am very happy if the restaurant does not charge it. So, I just do the same way. And how many % of food return? It is less than 1%. So it is easy to take it from the bill for me.

Weight Control and Golf

I bought another pair of toning shoes and worked hard. I normally leave my house at 9:30am and come back to the home around 11pm. So, I wear toning shoes almost 14 hours a day. My weight is 165lbs as usual. I do not want to say as usual but this is true. Recently I found that beef by itself did not gain weight. I try to eat beef occasionally for my golf game stamina. I eat roasted beef with salad. This combination is not bad. I feel the problem is side dishes of main food like French fries, mashed potato things.

I played golf at Manor in Alpharetta. I saw so many mansions around holes. And this golf course is great. Score? I could not finished 18 holes. 2 dogs showed up at No.12 hole and they played with our balls. We called the manager but could not get a good response and gave up to play. They followed us until No.13 hole and this was really unplayable.

Vitamin D triggers natural immune response against tuberculosis, study finds

There is no need to get vaccinated against tuberculosis if you maintain high enough levels of vitamin D, suggests a new study published in the journal Science Translational Medicine. Researchers found that, in the presence of even minimally adequate levels of vitamin D, the body's own immune system will naturally trigger an immune response against the disease and many others without the need for drug or chemical interventions.

Mario Fabri, who currently works in the Department of Dermatology at the University of Cologne in Germany, examined the effects of vitamin D on immunity during his time at the University of California, Los Angeles. He discovered that the vitamin D hormone is crucial for T-cells, which are the first responders to immune invaders, to produce a protein called interferon. And interferon has been shown to directly attack tuberculosis bacteria and prevent it from taking hold.

"Over the centuries, vitamin D has intrinsically been used to treat tuberculosis," said Fabri, referencing the age-old practice of putting tuberculosis patients in areas of high sun exposure as part of their treatment. "Our findings suggest that increasing vitamin D levels through supplementation may improve the immune response to infections such as tuberculosis."

Fabri's previous studies also found that vitamin D is necessary for the immune system to produce cathelicidin, an antimicrobial peptide that, like interferons, provides humans and other mammals with protection against bacterial infections. In other words, vitamin D equips the body with the tools it needs to prevent infection without the need for drug-based antibiotics.

"At a time when drug-resistant forms of tuberculosis are emerging, understanding how to enhance natural innate and acquired immunity through vitamin D may be very helpful," added Barry Bloom, co-author of the study and former dean of faculty at the Harvard School of Public Health.

What is even better is that interferons fight more than just tuberculosis. These powerful pathways of cell communication are known to exhibit an immune response to all sorts of viruses, bacteria, parasites, and even tumor cells, which means they can help prevent a host of other diseases besides just tuberculosis.

I have been living in USA almost 17 years and never heard before.

I was talking with customers last night,
" I am veru tired of this stressful business and go to bath tub before I go to bed almost every night."

 Most of or 100% of Americans know about Emsom salt, maybe.

Grilled Aji

I had a big Aji, Japanese Jack fish.
So I decided to grill it.
I opened stomach and cleaned. Then apply sea salt, put sliced garlic, lemons green onions, pepper salt.
Grill it with olive oil and put into the oven. That's it.
I think you can do with any fish like this.
Rosemary is good matching but I just did not have it this time.

Toning always! Shape up Always!
So I decided to wear Skechers Toning shoes at work.
I dumped my old Crocs and switched to this shoes.
We will see how my hip goes up and how I lose weight.
I am not sure can do. My weight this morning was 165 lbs.
It is juts limit.

Ramen Soup

I was making ramen soup the other day and just thought.
Ramen is getting popular in USA. It is delicious food and it is very popular as curry rice in Japan.

But do people know ramen is not healthy food?
Many people think all Japanese foods are healthy.

I make shoyu-ramen soup with vegetables, OX tail, pork and more.
Then, I add fat from slow cooked rib eye beef.
Many restaurant add pork lard, it is fat.
Fat is tastiness and make food delicious.

But it is very high calorie. And ramen soup contains a lot of salt.
Good food but need to be careful, that is ramen.

Pressure cooker

I bought a pressure cooker recently for the restaurant.

I was watching food channel and thought it.

Now, I use this for meat cooking.
I can save time, money.

Slow cooked rib eye  is simple sample.
I used to braise about 405 hours with slow fire.
But it is only 25 minutes now.

Namako part 2

It is not easy to clean namako. There is no bones like Octopus.
And this creature changes the body shape. And this is still alive.

I use a lot of salt and clean the body, Need to rub on the cutting board.
It takes about 5 minutes to clean.

See, just like after shower, the body is very beautiful.

Just slice thin after clean.
And eat with Tosazu or Ponzu,
I think Tosazu is better just like kanisu or takosu.
I will buy this for a while.

Nore Sore, Sea Eel Baby

This is also very seasonable. Nore sore is sea eel baby.
It is hard to show you with the picture.
1 piece of nore sore is around 2 inches.
We eat as sashimi or sushi.
It is fun to eat fish noodles.
I think nore sore is avaulable only 2-3 months.

Namako, Sea Cucumber

This is the first time I carry namako.
It is fresh arriced from Japan.
I used to eat alot when I was childhood. My mother used to make it when it was in season.

How to eat? Good question.
Cut it on stomach side and cleand with salt.
Then cut in very small bite size and eat with ponzu vinegar. It is just like sunomono but this is chewy and has good texture.

It is hard to chew but that's texture is good for me.

This is Kinme-dai, Splendid Alfonsino. Some people say golden eye snapper but it is not real name,
Anyway, American people do not eat much braised fish.
You guys like grilled and deep fried.
We Japanese like many ways of braised fish. It is called Nitsuke. So, this is called Kinmedai Nitsuke. We have Karei nitsuke, braised sole and more.
There is 1 head per week. I do not have more than 1 every week.

Stags leap Trio, this is my dream!

I opened Fay 95 last Sunday and was really good.
So I decided to buy other 2 high end from Stags leap Wine Cellars.

How I am so lucky, I have an account with this distributor.

Cask 23 is 2006, SLV is 2007 and Fay is 2008.
I can not drink right now, at least wait 10 years.
So, the first one will go into my mouth in 2016, 4 more years.
I cannot wait.

I have so many wines I want to drink before I die.
Life is short and we do not know how long. Juts buy and drink when we have chances.
We cannot carry wines and money to the high above world.

Kisu, Whiting

This is new fish from Japan. Kisu is whiting. A tiny white fish but has good texture. We eat it as Tempura sometimes but also good for sushi. It is sold out this week and will come back next week.  Eating season fish is very important, I think.
