Tamago is very important factor of Sushi restaurant.
I always say to our customers.
Good sushi restaurants have good tamago.
So, it is very easy to judge sushi restaurants grade.
Here in Atlanta, guess how many sushi restaurants make tamago in store? I guess less than 10 or around 10.
I hired many non-Japanese sushi chefs, all of them could not make tamago. Even I hired Japanese chefs, they could not make it sometimes.
If they can make tamago, they can cut fish and do good job. This is my simple judgment.

If you go out of town, states and try to eat sushi, go check tamago first. If tamago is cooked on same day and not frozen, you can go ahead order sushi otherwise just leave. Just say " Family emergency".
