Kohada, Gizzars Shad

Kohada is must item of Edomae Sushi, authentic Japanese sushi.
Ko means child and hada means skin.
This fish is very soft and meat is just like child skin, so they started to say kohada.
This is a group of herring.
The size is very small and hard to cut because the meat is very soft.
The big fish bottom is kodai, small size sea bream.
I juts display for size comparison.

Kohada is marinated fish like saba,
I normally don't carry. It was a gift from our fish company.
I thought it was disorders or over orders. Anyway free is good.
