Chicken Gizzard and Pork Belly

I was Watching Food Channel last night. And I saw come restaurants cooked chicken gizzard. I thought this is only for Asian. I have chicken Gizzard ponzu sauce, means fried and ponzu sauce.  But I cook it this first and make tempura.
And how about pork belly. We love this but too fat to eat for American? We call it But Kakuni. Most of Japanese restaurants carry this item on the menu.
It is simple and just take a time to make it. It's kind of slow cooked food.
