Awabi, Abalone from Australia
We tried awabi a couple of times but was not great.
But I will keep it on the menu this time.
This awabi is frozen and from Australia.
So, it means the cost is lower than fresh one from California.
I tasted in raw and had almost same texture. But I will not serve this in raw,
I steamed with sake and kelp. It makes awabi soft and can eat easily.
Awabi steak with butter is very popular dish in Japan as well as sake steaming.
