Fish delivery and more

I did not order much fish this week because of Labor Day Holiday. I know many people go out of town.

We have some problem by Irene. Live scallop, live aoyagi clam and flounder are not available for a couple of days. I think it will come at the weekend.

Our business is getting slow but August is good month and we are making good sales. Thank you for your support.

We will be closed from September 4th to 6th. We will be back 7th lunch business.

Vacation? No, I just take a day off. So many paper works are available for me.

From Fish to Nuts – Controlling Diabetes

 In contrast to the 2007 National Diabetes Fact Sheet, which used fasting glucose data to estimate undiagnosed diabetes and prediabetes, the 2011 National Diabetes Fact Sheet uses both fasting glucose and A1C levels to derive estimates for undiagnosed diabetes and prediabetes. These tests were chosen because they are most frequently used in clinical practice.

 Among U.S. residents ages 65 years and older, 10.9 million, or 26.9 percent, had diabetes in 2010.

 About 215,000 people younger than 20 years had diabetes—type 1 or type 2—in the United States in 2010.

 About 1.9 million people ages 20 years or older were newly diagnosed with diabetes in 2010 in the United States.

 In 2005–2008, based on fasting glucose or hemoglobin A1C (A1C) levels, 35 percent of U.S. adults ages 20 years or older had pre-diabetes—50 percent of adults ages 65 years or older. Applying this percentage to the entire U.S. population in 2010 yields an estimated 79 million American adults ages 20 years or older with pre-diabetes.

 Diabetes is the leading cause of kidney failure, nontraumatic lower-limb amputations, and new cases of blindness among adults in the United States.

 Diabetes is a major cause of heart disease and stroke.

 Diabetes is the seventh leading cause of death in the United States.

Two recent studies investigated specific diet components – one nut intake and one fish intake on the risk of developing diabetes and controlling blood glucose levels.

Nuts as a Replacement for Carbohydrates in the Diabetic Diet.

OBJECTIVE Fat intake, especially monounsaturated fatty acid (MUFA), has been liberalized in diabetic diets to preserve HDL cholesterol and improve glycemic control, yet the exact sources have not been clearly defined. Therefore, we assessed the effect of mixed nut consumption as a source of vegetable fat on serum lipids and HbA1c in type 2 diabetes.

RESEARCH DESIGN AND METHODS A total of 117 type 2 diabetic subjects were randomized to one of three treatments for 3 months. Supplements were provided at 475 kcal per 2,000-kcal diet as mixed nuts (75 g/day), muffins, or half portions of both. The primary outcome was change in HbA1c.

The mixed nuts were a combination of raw almonds, pistachios, walnuts, pecans, hazelnuts, peanuts, cashews, and macadamian nuts. The mixed nut group had the greatest improvement in blood glucose control when measured by the glycosylated hemoglobin (Hb1c) test. They also had a significant decline in LDL (“bad” cholesterol). The other two groups had no significant improvement in Hb1C, but the muffin-nut mixture significantly reduced LDL cholesterol in the blood.

Dr. Jenkins, the lead author of they study said: “Those receiving the full dose of nuts reduced their HbA1c (the long-term marker of glycemic control) by two thirds of what the FDA recognizes as being clinically meaningful for therapeutic agents. Furthermore, neither in the current study nor in previous reports has nut consumption been associated with weight gain.”

Dietary Fish Linked to Lower Risk for Type 2 Diabetes in Men

The second study was a prospective study to see if there was an association between fish intake and type 2 diabetes in Japanese adults. 22, 921 men and 29, 759 women aged 45-70 years old non-diabetics completed a survey and a food frequency questionnaire (147 food items). Over a 5-year period, 971 new cases of type 2 diabetes were self-reported (572 men and 399 women). Fish intake as significantly associated with a reduced risk for the development of type 2 diabetes in men but not for women.

Previous studies have linked the presence of environmental contaminants to an increased risk of diabetes. The authors proposed that the women in this study had a higher body fat mass, which can accumulate these contaminants and possibly negate the benefits of fish intake on glucose control.

There were some obvious limitations in this study, the authors noted. There was a lack of data concerning the cooking methods of the fish or the contamination level of the fish consumed. There was only a one time dietary recall and all the data was self-reported as often found in diet studies of this type.

Nevertheless, study results often find gender differences. If this is truly the case in this study, it suggests that one-diet-fits-all approach is not always the answer. Future diet recommendations will hopefully be able to be more individualized and personalized to take into consideration the variety of confounding biological factors affecting diet and health.

Awabi, Abalone from Australia

We tried awabi a couple of times but was not great.
But I will keep it on the menu this time.
This awabi is frozen and from Australia.
So, it means the cost is lower than fresh one from California.
I tasted in raw and had almost same texture. But I will not serve this in raw,
I steamed with sake and kelp. It makes awabi soft and can eat easily.
Awabi steak with butter is very popular dish in Japan as well as sake steaming.

This toro is available this week.

It is not bad, Toro is OK but part of tuna is not great this time.

Suzuki, Japanese seabass and Kinmedai, Splendid Alfonsino are not coming today. Kinmedai might come on Thursday.

Uni is available for a while.

I read some article and made a dish for long life.
This is tekka-don, sushi rice with sliced tuna. But topping is very important.
Natto, fermented soy bean, green onion, okra, nagaimo and pickle radish are on top of tuna.
All these items are good for your health.
These are good prevention for diabetes.






Natto is a 1,000-year-old Japanese dietary staple made from soybeans that have been soaked and fermented. The resulting product is sticky and has a stringy, web-like consistency. Though for many an acquired taste, this popular food may be served with a bit of sugar over rice for breakfast or as a mixed dish with shredded radishes and spicy or tangy sauces. Natto is extremely nutritious--high in omega-3 fats, protein as well as a dozen vitamins and minerals.


Basic Nutrition Values
A 100 g serving of natto provides about 212 calories, 11 g fat, 2 g saturated fat, 18 g protein, 14 g carbohydrates, 5 g sugars or 1.25 tsp., 5 g dietary fiber, 0 mg cholesterol and 0 mg sodium. This week's fish delivery is not as usual. All Japanese fishes are coming today. It is because of holiday in Japan. August 15th is The end of war memorial day in Japan. It was in 1945. The day was the end of the World War 2, actually we called Pacific Ocean War. It passed 66 years. We gave up having military power and US protected Japan. It is same even now.



PGA Tour Championship

I went to Atlanta Athletic Club on Saturday and Sunday. I followed Ian Poulter 9 hole on Saturday and Followed Matt Kuchar on Sunday.

I did not bring a cap this time because of nice weather. I got some sunburn but was OK because I play golf 2 days a week.

So many Americans were drinking beer under the sunshine. I thought this was very dangerous. And so many people wore sandals or high heels. They must be tired to walk later.

My body was very tired but it is OK now and I thought walking is the best way of exercise.



A secret of long life

It is depends on insulin. If you get diabetes, your life is short 9 year for men and 13 years for women.

We are good so far, except uni delivery. Tuna is good, not super excellent. All Japanese fish are fine. Kinme-Dai is coming tomorrow.

I feel "Togo" order is increasing this week. People try to save money. I thought everybody got a shock when Dow dropped more than 1000 points in 2 days.



AC is working very well.

That was last Tuesday. Our AC unit was broken. It was amazing thing. They fixed in a few hours. I never seen like this. I called our landlord at noon, they called a AC company and they came in a few hours. They exchanged some parts. And now we get complaints for cold.

Hamo, Pike Eel

This is very seasonable fish.
Pike eel is summer fish.
There are so many bones. I bought un-cut bone fish last year and tried to cut bones, It was so difficult to cut all bones.
So, I decided to but bone cut pike eel.
This is still fresh one and I boil it moment.
It is served with plum soy sauce.

This week's tuna

I got this today, big eye tuna and stomach side but no oh-toro.
It did not have much toro, just chu-toro.
I bought 1/4 and available 3-4 days.

 My friend gave me this and I enjoyed. It is tea but not much strong and very smooth. And so many good benefit are available.

Miso Ginger Dressing

This is the recipe of my cooking demo last Sunday.
It was delicious miso ginger dressing. If you have a chance, try it.

Miso Ginger Dressing

White Onion 1
Sesame seeds 2 large spoons
Ginger 1-1.5 oz  need peel skin
Honey 2 large spoons
Carrot 1 need to peel surface
Canola Oil 10-12 fl oz.
Apple 1  need to peel
Shiso leaf 10 not important
White Miso 2 oz
Orange juice fl oz.
Mirin 5 fl oz.
Soy sauce 5 fl oz.

How to make it? JUST BLEND THEM. That's it. It last 2 weeks at fridge.

Fish delivery and more

We have good tuna so far but not sure for weekend. Uni is coming tomorrow.

I have a new fish, Kochi ( Bartail Flathead) . It is very firm white fish.

And Suzuki , Japanese Sea bass is available.



Please do not come tonight.

Our AC is broken right now. I just found this noon. I called our landlord to fix it but did not get a return call yet.

Outside temperature will be 110 around this evening. I saw inside temperature was 86-87F.

We had 26 people dinner party last night and made money. So, it is Ok for slow business tonight.

I might wear just T-shirts tonight.



Nearly half of Americans don't pay taxes?" - Why that should make us mad!

I do not remember where I take this article but everybody needs to pay tax equally.

About 47 percent did not pay no federal income taxes at all for 2009. Either their incomes were too low, or they qualified for enough credits, deductions and exemptions to eliminate their liability. That's according to projections by the Tax Policy Center, a Washington research organization.

In recent years, credits for low- and middle-income families have grown so much that a family of four making as much as $50,000 will owe no federal income tax for 2009, as long as there are two children younger than 17, according to a separate analysis by the consulting firm Deloitte Tax.

Tax cuts enacted in the past decade have been generous to wealthy taxpayers, too, making them a target for President Barack Obama and Democrats in Congress. Less noticed were tax cuts for low- and middle-income families, which were expanded when Obama signed the massive economic recovery package last year.

The result is a tax system that exempts almost half the country from paying for programs that benefit everyone, including national defense, public safety, infrastructure and education. It is a system in which the top 10 percent of earners -- households making an average of $366,400 in 2006 -- paid about 73 percent of the income taxes collected by the federal government.

The bottom 40 percent, on average, make a profit from the federal income tax, meaning they get more money in tax credits than they would otherwise owe in taxes. For those people, the government sends them a payment.

The vast majority of people who escape federal income taxes still pay other taxes, including federal payroll taxes that fund Social Security and Medicare, and excise taxes on gasoline, aviation, alcohol and cigarettes. Many also pay state or local taxes on sales, income and property.

The federal income tax is the government's largest source of revenue, raising more than $900 billion -- or a little less than half of all government receipts -- in the budget year that ended last Sept. 30. But with deductions and credits, especially for families with children, there have long been people who don't pay it, mainly lower-income families.

The number of households that don't pay federal income taxes increased substantially in 2008, when the poor economy reduced incomes and Congress cut taxes in an attempt to help recovery.

In 2007, about 38 percent of households paid no federal income tax, a figure that jumped to 49 percent in 2008, according to estimates by the Tax Policy Center.

Obama has pushed tax cuts for low- and middle-income families and tax increases for the wealthy, arguing that wealthier taxpayers fared well in the past decade, so it's time to pay up. The nation's wealthiest taxpayers did get big tax breaks under Bush, with the top marginal tax rate reduced from 39.6 percent to 35 percent, and the second-highest rate reduced from 36 percent to 33 percent.

But income tax rates were lowered at every income level. The changes made it relatively easy for families of four making $50,000 to eliminate their income tax liability.

Here's how they did it, according to Deloitte Tax:

The family was entitled to a standard deduction of $11,400 and four personal exemptions of $3,650 apiece, leaving a taxable income of $24,000. The federal income tax on $24,000 is $2,769.

With two children younger than 17, the family qualified for two $1,000 child tax credits. Its Making Work Pay credit was $800 because the parents were married filing jointly.

The $2,800 in credits exceeds the $2,769 in taxes, so the family makes a $31 profit from the federal income tax.



Apple Now Has More Cash Than The U.S. Government

A private company has more cash than US government.

According to the latest daily statement from the U.S. Treasury, the government had an operating cash balance of $73.8 billion at the end of the day of July 28th.

Apple's last earnings report showed that the company had $76.2 billion in cash and marketable securities at the end of June.

In other words, the world's largest tech company has more cash than the world's largest sovereign government.

That's because Apple collects more money than it spends, while the U.S. government does not.

Objection!

I had a bad review at yelp.

·         Hole in the wall. Crowded. Small rolls. Expensive. Patio opens at 8 so you wont get a table if standing room only. 15 minutes for drink order. Just OK.

We decide to open Patio by checking the temperature of outside.
If the temperature is more than 80F, we do not open. It is because of food safety.
This guy needs to know how dangerous eating raw fish at high temperature.

Of course, I need to tell our servers to get drinks fast.
