Got tuna and no business

I received this beautiful tuna on last Friday.
I got good tuna 2 times a week.
This is good thing but not usual.
Our supplier said that the business in NY was not great and good tuna was over stocked.
So, this tuna came from NY.
It was very good condition. I think it will last 5-6 days.

Shoyu ramen, my original soup

I finally made original shoyu ramen soup.
It is not easy but is not hard.
Many people use chicken broth but I do not use it. I use beef broth.
So, the I feel more flavorful. It is light soup but tasty.
I made such a kind of shoyu ramen soup.

ORECK, cheap? or expensive?

This is my ORECK. I bought this 4 years ago.
It did not work well and brought to a store.
They said I had 5 years warranty.
Yes, I had it.
They can do free check and clean every year. But I did not know it.
I can bring 1 more time next year.
So, the brush was not working well and the sales clerk asked me to change to new part.
The cost was $40. And a light bulb was not on. This was also my cost. I asked him to change to new bulbs. There were 2 and 1 was still OK but I decided to change.
I left my vacuum and a few days passed. They called me to pick up. And they said that the bag was dirty and recommended to clean. The cost was $20 and I said YES.
So, my total cost was $65 plus tax.
I just thought. If I paid $65, I could buy a  new cheap vacuum. Which one is better? Buy a cheap one and use 2 yeard and dump and buy new one again. Or buy expensive one and use a long time with some cost.

It is hard to translate but there are brown rice, black rice, sweet rice, soba rice, black sesame, white sesame, corn, white sorghum, amaranthus, red bean, barley, adlay, millets
I cook this package with white and brown rice.
I think this 15 grains rice is better than brown rice.
Sushi rice? No, it is too sticky to make sushi.

Fish delivery and more

We will get good tuna this afternoon. It is big eye tuna again. Our supplier said the size was huge, 1/4 was almost 50lbs. I ordered back side this time.

Japanese fish delivery is not normal this week. We get it today and no delivery is on Thursday because of Japanese holiday. July 21st is Ocean Day in Japan.

You're trying to get pregnant ...and this is all you hear:

"You're just trying too hard."

"You're too stressed - just relax - and it will happen."

"You've got to calm down and let nature take it's course."

If you've been working at getting pregnant 6 months or more, and still no conception, you've probably lost count of the number of times well meaning friends and family offered this, or similar advice.

Though the idea that "trying too hard" to get pregnant was once a popular notion, dramatic advances in fertility treatments - particularly in the past decade - all but did away with that idea.

Now, however, the wheel of life has turned yet again, and doctors are once more looking to the idea that stress - and sometimes, "trying too hard" - may actually play a role in up to 30% of all fertility problems.

"It's becoming more and more important, in terms of what studies we do, to focus our efforts on the physiological effects of stress, and how they may play a role in conception," says Margareta D. Pisarska, MD, co-director of Center for Reproductive Medicine at Cedars Sinai Medical Center in Los Angeles, and editor -in-chief of the American Society for Reproductive Medicine News.

Indeed, while doctors say that right now there isn't enough data to draw a clear and obvious link, many believe it's only a matter of time before we connect all the dots and see the bigger picture - and the links between stress, fertility and getting pregnant."What we do know now is that when stress reduction techniques are employed, something happens in some women that allows them to get pregnant, when they couldn't get pregnant before," says Allen Morgan, MD, director of Shore Institute for Reproductive Medicine in Lakewood, New Jersey.

While the exact pathways between fertility and stress remain a mystery, Morgan believes hormones like cortisol or epinephrine - which rise and often remain high during times of chronic stress - play a key role.

"It's also possible that reducing stress may enhance some of the endometrial proteins involved in implantation, or increase blood flow to the uterus, which also impacts conception," says Morgan.

Pisarska says the effects of stress may be highly individual, different for each woman who is affected.

"Stress may cause one set of reactions in one woman, and something else in another, so ultimately the reasons behind how or why stress impacts fertility may also be very individual," says Pisarska.

The Science Behind Stress, Fertility & Getting PregnantWhile doctors may not know the exact links between stress and fertility, a series of studies show the impact is hard to ignore.

In research published in the journal Human Reproduction, doctors compared the rate of conception in couples that reported feeling stress, and those who were not.

What they found: Pregnancy was much more likely to occur during the cycles when couples reported feeling "good" - happy and relaxed. It was less likely to occur during the months they reported feeling stress. tension or anxiety.

But it's not just natural pregnancy cycles that are affected. In research published in Fertility and Sterility in 2005 experts at the University of California at San Diego, reported that stress may play a role in the success of fertility treatments, including IVF.After administering a series of questionnaires designed to measure patient's stress levels, the researchers found women who scored highest - indicating the highest levels of stress - had 20% fewer eggs available for retrieval in any given cycle, compared to women who were less stressed.

Moreover, of those who were able to produce eggs, those who were most stressed were 20% less likely to achieve fertilization success. Stress was compromising their fertility, possibly affecting ovluation or egg quality, and reducing their chances of getting pregnant.

Be careful of Traffic ticket.

Our employees got traffic violations recently.

Case1) No turn Right- This is at Pharr Rd. and Piedmont Rd. A police officer sometimes hiding BP gas station. As I see 30-40% of drivers ignore this sign. If you are not lucky, you have to pay $195 to City of Atlanta.

Case2) Speeding- This is on Peachtree rd. in Dekalb Co. It is around Brookhaven station. A police officer is staying at Subway or Keller Williams office parking lot. The limit of this road is 35mph. But we can get 40-45mph around here. It is because of after curving road to straight. So, they know the place to catch speeding drivers easily. They do this day and night. And they do north bound and south bound. If you are not lucky, you have to pay at least $150 to Dekalb County.

Case3)Changing lane without signal- This thing happened last Saturday. A police officer told our employee that she changed the lane without signal. I think so many drivers do this. It was Saturday night and police needed to get some money.

I got a ticket 3 years ago. That was STOP sign. I paid $165 to City of Doraville. Now, I try to keep speed limit, stop 4 second at STOP sign, give a signal when I change the lane. DUI? I drink a glass of beer or wine at the restaurant. That's it. Sometimes I drink more than that. I take a nap at the restaurant when I feel bad. And go home.

Can't you see our menu?

This might be a good tool.
I have several complains that our guests cannot see the menu.
It is because of darkness, oldness.
I do not want to make bright in the dining area.
Dark is good and sexy, right?

We had a great customer last week. Shirley is 88 years old this year and doing well. She has a full time job, believe or not.
Angela bought this old lady. By the way, we have a 93 years old customer. Her name is Ms. Gelder, I think she is the oldest customers here.
They eat sushi, of course.

Quail legs

Do you like to eat quail?
This is our new item for appetizers.
The picture is deep fried. But we do pan fried,
We tasted both ways and decided pan fried way was better taste.
I feel like this is better than chicken.

Mabaru, Sebastes

This is our new fish. The Japanese name is Mebaru, and English name is Sebastes.
Buy you might say Ocean perch.
It is same group of Kinki, Thorn head or Kinmedai, Alfonsino.
If it is fresh, good for sushi and sashimi, otherwise good for braised like kinmedai head or kinki.
This fish comes from Boston area and reasonable price.
The meat is white and same as red snapper. but texture is firm and tasty.
You really have to know what wild fish look like.
I like to eat this kind of fish.

By the way, American fishermen don't know about treating fish. That's why domestic fish don't last longer.
Japanese fish come from Japan. It passed already 4-5 days after caught, but the meat was still good.
Keeping fish fresh is not easy but have to do it for keeping sashimi quality or grade.

New at Costco: Greek Yogurt plain

I love Greek Yogurt, I always buy Chobani at Costco.
And I found Kirkland Signature Greek Yogurt. This is plain and no fat.
Costco selling PB Greek Yogurt means Greek yogurt market is expanding and stable.
I add strawberry preserve or something to eat.

Fish delivery and more

We had a normal delivery yesterday morning. Japanese fish is available for tonight business.

We also received big eye tuna again but this was not super excellent. It was just great.

It was almost same condition as last week but less toro was in it. I posted the pictures at sushiandpassion .blogspot com. Please take a look.

Uni is available but not much left. Quality of uni is getting better.

More Americans own Smartphones than hold a bachelor’s degree or speak another language in their homes, according to a Pew Internet Project report released Monday.

In a telephone survey, 83% of respondents said that they owned a cellphone of some kind and 35% of the 2,277 U.S. adults questioned in English or Spanish said that they owned a smartphone.

Not surprisingly, wealthy, well-educated and young respondents all had high levels of smartphone ownership. African-Americans and Latinos in the survey were also more likely to own smartphones than whites. But just about everyone who owned a smartphone was likely to use that phone to access the Internet.

Nine in 10 smartphone owners (87%) used their phones as Internet portals — about 78% of them did so every day. Nearly a third of smartphone owners use their device as their primary Internet connection.

With so many people relying on their phones for both verbal and digital communication, it’s no wonder the word cloud the researchers compiled to show respondents’ feelings toward their cellphones includes words like “necessary,” “convenient” and even, perhaps somewhat disturbingly, “love.”

I received this tuna yesterday. It was big eye tuna and stomach side.
It was not bad but not like last week.
Great tuna is AAA but chu-toro, medium fatty tuna is A-.

The tuna I got today.

It was not bad at all.
The only complain was just young, meant just a few days passed after caught
So, the meat was still firm.
I think it takes 1-2 days to get mature.
And toro gets more tasty.

Too fresh is no good, sometimes.

Golden melon, tasty!!

I am crazy for fruits in summer.

I bought golden melon this time.

It was not much juice when cut it.

But this sweetness is real and so good.

It is close to honeydew, but this golden is sweeter.

It was $3.79 at Costco.

I just made new T-shirts.
We make T-shirts every year with a new design.
The design of this year is 3 different tuna, blue fin tuna, big eye tuna and yellow fin tuna.
The price is $11 and size are 2T, 4T, youth S, youth L, adult S, M, L and XL.
It is 100% cotton and well made.

I bought new dishes.

I bought 6 of new dishes yesterday.

They are all small plate and are used for Omakase dish, tasting dishes.

We get more omakase orders now and fun to make it.

I like this tecture and taste.

I never had mangosteen. I have to try it before I die.

Suzuki, Japanese Seabass

I love this fish for summer. I make Suzuki Arai, moment seared suzuki with Japanese plum soy sauce.

Hot summer and sour soy sauce is great matching.

Normally, we burn on fried pan for searing, but I pour hot water and put it into the ice water immediately.

This process makes fish sweet and mild.
