Gyu-Suji, Beef tendon

Japanese people like this kind of food.
It is called street food, izakaya food.
It takes 4-5 hours to get soft. Then add daion radish and other vegetables.

It is good for your skin because of rich gelatin.

I tasted and felt OK. It is too heavy to eat for me.
I prefer OX tail or neck.

I do not use Taka Construction this time.
I use a professional man.
It will be finished in 6 weeks.

This liver is great with meat.


Hey, do not misunderstand!
This umazura-hagi is not metabolic, obesity fish.
They have a huge liver naturally.
And we put some sea salt and sake, make fish happy.
And steam just like monk fish liver.
The texture is tenderer than monk fish liver and become a good topping of meat.
Taste? sooo- good.

They are back!

They are not new fish item.
I used to carry for a while.
I tried some new fish but did not like and went back to these items.

Umazura Hagi is just like a stripper. I can take the skin off.
There are a few English name as Black Scraper, Filefish, and Scraper.
I take Filefish.

And another one is Kochi, bartail flathead. This meat is close to Akayagara, cornetfish.
Both fish are wild caught and feel good meat texture, and clean taste.
I finally got all Japanese fish this morning and very happy to serve you.

Simple dessert that you can make at your home

I went to Costco the other day and found frozen waffle.
And I just bought for something. I do not eat waffle for my breakfast. It is flour and not healthy.
But, hey it might be good for dessert.
So I decided to make it.

Heat up waffle with microwave.
Make sauteed apple with sugar and red wine. Make sure apple is tender.
Sprinkle powder sugar on top of waffle and place vanilla ice cream, place apple and sprinkle crushed corn flake. And use some sauce with berries.
That's it.
This is not breakfast but I do not mind that you eat hot summer morning.

Pollen Season is coming soon.


I am pretty much healthy. And I can eat anything I like. So, I am positively perfect. But I have bad allergy against pollen.
I would like to fly to somewhere during pollen season if possible.
Close the business for 3 months and stay on southern island.
But it is a wish, can not be true.
I am like Office Depot, taking care of your business everyday.
So, I have to start to drink this special oolong tea.
This oolong tea works for pollen allergy. Trust me, believe me, it is true.
I drink in the morning before I leave house. I drink during work.
I drink after dinner. Caffeine? Who care about this tiny thing. I do not care about caffeine.
It is 1:30am and I drink this oolong tea and I can sleep.
I am Japanese and no problem.
You can get this oolong tea at Buford Hwy Farmers Market.
Drink 2 litters(10 fl oz.) everyday. Do not worry about your color of pee. It is still mellow yellow.
And it never gotten brown.

Best tuna in 2011, so far.


This is the best tuna in 2011 so far.
I did not remember well when was the last time I got good tuna.
I've been selling farm raised blue fin oh toro.
But this is the good natural toro.
It is available all this weekend.
I know many people go out for Valentine's Day dinner.
You don't need to come to TAKA. Just see this beautiful tuna.

Braised OX Tail and vegetables

I want you to eat this kind of food next time.
Forget about sushi.
We have motsu nikomi which is braised offal. We normally use trip, intestines and more.
But these items takes time to get soft, so I use OX tail.
5 hours is enough time for OX tail.

I use white miso for this dish and add kelp flavor. It is just like slow cooked miso soup broth.
The tender meat and well cooked vegetables are great.
It is available this weekend.

O2 tuna Fresh

You know we carry O2 tuna, frozen yellow fin tuna in a oxygen sealed vinyl bag.

Now we carry fresh O2 tuna. It comes from Philippine.
There are many of good yellow fin tuna around Philippine. They catch tuna with fishing rod and keep tuna fresh and put oxygen together and ship.

Most of catching tuna is called haenawa, longline fishing. They leave longline with food and wait to get tuna. It takes 3-4 days to catch. So, some tuna is very fresh but some tuna is 2-3days old.

I do not show the picture of tuna. It is same as fresh yellow fin. Our supplier says this kind of tuna is getting popular in NYC restaurants.

We need to carry good tuna and fresh tuna always.

New Items




I had these last year.
Left) Nore Sore, Sea eel baby. It is hard to show you because the size is very small and the body is clear. A black spot is eye.
It is fresh comes from Japan. I think nore sore is available until March.
Right) Ishidai, Striped beakfish. This is a little bit disappoint. I had wild caught last time. But this is farm raised. The stomach was same as Shima Aji.
SO, the taste is buttery and Americans like, maybe.
It is white fish and same group of bass, snapper. I am not sure to carry this fish next or not.
I prefer to carry wild caught fish. Fish is not chicken or holly cow.
