I just bougyt to try.
It is $13 and around 25pieces in it. So, the price is not bad.
Meat is thinner than the picture as usual.
Taste? It was not bad. I think you have to make tartar sauce.
Boild egg, mayonnaise, pepper, salt, chopped onion,soy sauce( a little), lemon juice. All mix together and blend. You can make a nice one.

Is this tasty?: Almond Milk.

I bought this at Costco. I think this is a new item.
They says, 60 calories by 1 cup, 50% more calcium than milk, rich in antioxidants, lactose-free, daily free.

And, vitamin A 10%, Iron 4%, Zinc 10%, copper 2%, Vitamin E 50% and more.

I tasted it and felt just like soy milk.
I have no problem with lactose but 1in 117 of Americans have problem. This might help those kind of people. And low calorie is good for everyone.

Kid's chopsticks

Kids need kid's sized chopsticks.
They don't want to use regular sized chopsticks with rubber band.
In Japan, kids use their chopsticks as adults.
Using chopsticks is good for brains. The action of using chopsticks stimulates brain.
It is also good prevention of Alzheimer.

Holiday Special: Fish War is just started.

I read this Japanese economic magazine and was really surprised. I will write this for you.

It is busy season in Tokyo Tsukiji fish market because of New year is coming.
The price of Blue fin tuna is 20%, crab is 30% higher than last year.
The reason is poor catching but the real reason is aggressive competition in the world.
People eat more fish than meat for healthy reason. Fish consumption is 30-50% up in last 30 years. It is 20kg(44lbs) per person a year. But China is more than US and Europe. Chinese eat 25kg per person a year. It is 500% in last 30 years.

FAO says 10% of fish shortage in 2015. Japanese eat 60kg per person a year and this is the top in the world.

You know we carry Patagonian toothfish. I think many people like this fish. But we do not use this name. We use Chilean Sea bass. But Patagonian toothfish is the real name. This fish does not go to Japan any more. This is more popular in the US and they buy higher price than Japanese buyers.

The price of Black tiger shrimp is 20-30% higher than last year. And lobster also cannot go to Japan. Chinese like lobster and they buy 2 times than Japanese. How about king crab? Japan imported 30,985tons in 2004 and US supply was 13,960tons in 2004. But Japan imported only 16,283 tons in 2009 and US supply was 20250 tons in 2009. The price of king crab is 30% higher than last year.

In 2009, the total production of fish ( combining of catching and farming) was 1.6Billion tons. Farming proportion was only 10% in 1980. But it was 42.9% in 2008.

Japanese companies have great technology to farm fish. But the price is low in Japan. They are looking for buyers in overseas. Overseas buyers buy higher than domestic buyers sometimes.

Mikan, Mandarin orange

This is my favorite fruit. We say Mikan but English name is Mandarin orange.
In Japan, mikan is orange. It is easy to peel skin and we eat with inside skin. I think this skin is goof for health. It contains fiber.
Of course, vitamin C is in it.
Believe or not, I use to eat more than 20 mikans everyday.
My family farmed and could eat in winter.
So, my body get Orange color. But I am healthy now because of this, maybe.
I eat 5-6 mikans when I buy it.

What do you drink at the end of year?

I decide it. I will drink Henri Giraud this year.
I just found this recently. This is totally diffrent from other champagne. It is small production and close to hand-made.
This chanpagne was called irrusion until 2006. We could not drink al all. It was only for Monaco Royal family, British Royal family and high end celebrity.
Giaud family just started to sell this from 2007.

Cooking Azuki, sweet red bean.

I made mochi yesterday. Mochi is pounding rice and we eat around New Year. making mochi is easy because I use machine. And we make anko-mochi which is mochi with red bean.
Of course I can buy a can and use it but I love to make it it is because of taste.
I but dry bean and soak in water 1 night. Then cook about 3- 4 hours. Add water, sea salt, and sugar and make taste. The final things is take water and make firm. This is the hardest part of making sweet red bean.
It is always fun to make delicious food.

Osechi, New Year Dish

We eat Osechi dish during New Year. We used to make at home. But most of family buy at supermarkets or department stores.
It is same as American way, some items are for good luck, long life or whatever.

I will have A new Year's party at my home and I prepare.
See, we eat beans, kelp and fish.

It is good for sushi.

Sayori, Halfbeak

This is really a beautiful fish. It is slender and silver and blear color.
It is good with grated fresh ginger. It comes Tuesday and Thursday.

This is good for cold nights.

I drink hot chocolate every winter.
I take coffee most of the morning. But I switch to hot chocolate when it gets cold.
I use at least 70% milk and add Baileys. This is good in the morning and night.

I bought this at Costco. See? I like Costco.

Sushi Break Up?

I made Nigiri Omakase for a customer. They asked me to cut in half after made. It passed 20minutes after served.
I told my waitress, " It's gonna be ugly." He agreed with me and I did.
I have 2 questions.
1~ He could ask me to make half size from the beginning. I do sometimes.
2~He could ask me as soon as possible.
It was a cold night. We use AC to make warm inside of the restaurant. Warm air is not good for raw fish. And it makes fish dry. And It was not busy might, I could make small nigiri sushi for him. I thought he wanted to share with a lady. It was fine he could share but no one wants to eat ugly food.
And I do not want to cut mi nigiri sushi in half. This is another world of sushi in America.

Sushi Class 2010

We had a Sushi Class on Sunday night.
Caroline asked me to do this class. We had it in 2006 at my home.

I explained to make sushi rice and making rolls, nigiri sushi.
Then, everybody made sushi and ate.
It was a fun night.

We had special guests on Saturday. They were from South Carolina.
They went to GA Dome to see SEC Championship.
You knew the result, Auburn was very good.
Anyway, We had good sales on Saturday night.
The lady is Britteny, she was cute, and Ed and Sean, I do not care about them.
By the way, Ed's sister is Miss South Carolina and is on TV, Top Model.

Is this tasty? Pork Bun, Nikuman

We say this Nikuman. Niku means meat and man means bun.
This is JFC brand and you can buy at Asian grocery store.
We like these item and winter dish.
If you go to convenient store in Japan, you can find any time in winter.

This is frozen food and easy to heat up with microwave.
It is good for kid's snack for tea time. Tea time? Oh sorry, this is not England. We have tea time around 10am and 3pm in Japan.

I went to Peachtree Dunwoody Rd. Costco.
And I bought egg and milk.
Egg expiration date is January 5th. And milk is December 28th.
Brookhaven is December 7th for egg and same date for milk.

The busy place is always good because get new products most of the time. But the slow places keep products for a while because no one buy it.

It is same as restaurant, sushi places. You have to go busy places because most of fish are super fresh.

I will not go to Brookhaven Costco again.

A new Costco in Brookhaven

I threw up today. It was bad. I do not do much.
And I was thinking what was bad.
It was not stomach virus or something.

It was fine in the morning. I made zosui, Japanese risotto for the customers and made mine for shooting and tasting.
When I was eating zosui, I felt something bad. But I ate all of it. It was not big portion.
And I was eating tonkatsu, crispy fried pork tenderloin. And I went to the bathroom.

So I could say it was from zosui. But I could say it was not from Chilean sea bass. I cut that fish yesterday. There was no problem. That meant egg was suspicious.

I bought egg at New Costco in Brookhaven. I knew the expiration date was short but I bought. We normally use it in 4 days. We still had 10 days.

I am very sensitive against egg. I hit it a long time ago in Japan.

And I almost decided to not go to new Costco for a while. They just opened in October and they did not have much business so far.
That means all products are not much fresh. I used to go to Peachtree Dunwoody store.
If I buy same egg at there, the expiration date will be in January. That means their products are moving. It is same as cucumber, salad and other daily products.

I tried to but organic milk at Brookhaven but gave up to buy it because of expiration date. Chicken was same and I picked new one fron the bottom.

I try to check the date but miss sometimes. So, my safe way is going back to Peachtree Dunwoody store.

Zosui with chilean Sea bass

This is another winter dish. It is called zosui, I say Japanese risotto.

We normally make this after nabe, hot pot dish.
We clean the inside of hot pot after eat nabe.
Then leave broth only and add steamed rice and egg, and cook a couple of minutes.
Rice gets all good stuffs from broth and make great taste.
I do not cook nabe here but braise sea bass bone and take meat and add carrot or onion. And make flavor. It is same after that. I ass steamed rice and egg.

I only make zosui when I cut Chilean sea bass. I can not dump this bone. It is so tasty and need to use for something. I sometimes make soup from this bone.


I was cooking oden for tomorrow. Oden is winter dish in Japan.

I make broth from short rib. But this short rib is not good one, it is almost junk. Yes, junk short rib can make good beef broth.
all fat melt and good stuff comes out from the bone.
Then I add light soy sauce, sake, mirin, salt and kelp. It is simple to make broth.
Then, I add daikon radish, potato, yam cake, fish cake, boiled egg, fried tofu and more.
We can eat oden on same day but next day is better taste. And 2 days later is much better taste. I ate this on Thanksgiving Day but I made 6 days before.
I can sell oden on Thursday and weekend.
