Beauty grows

She and I used to work together at Atlanta Fish Market in 1999.

She was only 18 years old at that time.

She came to my restaurant with mother in 2002.

And she suddenly came back again yesterday.

I did not realize but thought what a beautiful lady.

She told me that she moved to NYC.

Lunch business is coming.

We start Lunch from August 2nd.
What is the big surprise for this?
It is fukusai, side dishes.
We offer traditional Japanse side dishes.
Kinpira is sauteed gobo and carrot.
Shira-ae is spinach with tofu paste.
Okara is tofu dust. Sorry for bad image but tastes good.
Hijiki is special seaweed.
Kiriboshi Daikon is cooked dried daikon radish.
We used to eat these items with steam rice and main dish.
But I didn't know when our food style changed. I believed the day McDonald came to Tokyo. It was around 1980. Fast food is very popular in Japan now. Easy frozen food conquer Japanese food industry.
Then, people get sick, diabetes, heart disease, cancer.
People eat more bread than rice.
So, I decided to provide old style Japanese food to American people and make you guys healthy.
Lunch opens from Monday to Friday, 11:30am-2:00pm.
We do dry run, practice round this Thursday and Friday. All entrees are $3.00. Please join us and try old style healthy food.

Nigori Sake is very popular.

I don't know why but we sell a lots of nigori sake recently.
I asked our supplier and had same answers.

I believe one of reasons is easy to drink because of a little bit sweet.
And milky touch also can drink easily.

So, we are expanding nigori sake.
A small one is Kizakura, yellow cherry.
And, the black label one is Tsu ki no Katsura. It is hard to translate but moon something. Tsuki means moon.

So, we carry 4 different nigori sake.

Fresh Blue fin Ohtoro.

I do not know this is real or fake?
It is blue fin tuna and fresh.
I need to make sure this is wild caught or farm raised.
Frozen blue fin toro is everywhere.
I carry sometimes when I do not have wild caught one.
This is so--- good and much much better than frozen toro.

Myoga is available.

I do not know how many people know this vegetables.
Myoga is a kind of ginger.
And this is sprout but flower comes from here later.
We make pickle or slice and eat with sashimi.
It is available for 2 months only.
I normally get in August from my garden.
But this one is from my employee's home.
Please try it. Some people like this strong flavor and some people do not like this strong flavor.

Korean Soy milk

I just bought and liked this. The brand name is Sahmyook. This is made in Korea.
Korean power is pushing Japanese companies away.
I take more Korean products and learn from their food, culture.
They cannot beat me.
Korean food means a kind of beef but they eat a lots of vegetables. They like aloe vera juice, ginseng.

This is very useful.

I like Costco. I found this and used 2 times.
The taste was great and good for sandwicthes.
We can keep this almost 60days in the fridge.
Just think, you but BBQ rib and grill and take meat.
This is great short cut.

Mizudako, Octopus from Japan

This is mizudako from Hokkaido, Japan.
I was reading from Wikipedia. We call it leg but Americans say as arm.
And we think it as head is actually body. Head is just above of arm.
Octopus is a same group of squid. But Squid have 12 arms and octopus have 8.
Octopus is high intelligence animal. They can see colors, can understand shapes and can study.
Octopus is very popular now because of World Cup. A German Octopus can hit which team wins.
Their life span is very short. Most of octopus live a year.
I make carpaccio or tiradito with this products.

Jyunsai, water shield

It is season of Jyunsai, water shield.
We eat this new sprouts in summer.
The texture is very unique,
It feels like sprouts covered with natural jello and eats like jello sprouts.
We use is with sunomono, soup and more.
We only serve fresh one and time is limited.

Cooking Class is coming.

We have cooking class on August 21st. Saturday.
This is joint event with Japan America Society of Georgia.
I will make soba and udon soup, okonomiyaki and gyoza.
The fee is $30 with lunch and hands on.
It is easy to make them.
