This is botox face.

I just saw this magazine accidentally.
This is from People.
She is only 23 years old. 10 surgeries in a day?
And she did breast enlargement when she was 17 years old.
So, this is 2nd time. Ans she did botox.
I can say she gets very ugly when she become around 40 years old.
I always feel that Americans want to enjoy current life. And they do not see the future much. Or they do not think about future.
I like natural body,natural face and natural breast.
It is same as tuna. Americans like farm raised oh-toro because of big fat, buttery taste.
They like more man-made fat than natural made fat.
Sometimes we need to think what is real and what is fake.
Fake is fake, forever.

Gelatin Power

I have 2 different gelatin.
One is pork leg and another one is OX tail.
The left picture is before heating up. I just take from refrigerator.
It is not liquid. This is the power of gelatin.
I also call natural botox.
I don't know why so many people spend a lot of money and get botox.
My OX tail soup is only $5.80, Ramen noodle is a little bit expensive and $9.50
You can trust this power. Look at my face if you have a chance. I do not have wrinkle.

Shako, Mantis Shrimp

Here you are ! This is a new item. Mantis Shrimp.
But it is not shrimp group.
I can say the texture is like between shrimp and crab.
I like shako. I have no ides of the meaning of shako, but pronunciation is same as garage in Japanese. So sushi lovers call it as garage.

New Arrival and more.

I got Iwashi, Japanese sardine.
It was an accident. We actually did not order. Our supplier told me that it came from Japan by accident.
I like iwashi . tasty, has good fish fat. Iwashi contains a lot of DHA, EPA.
It make us smart.
And, tuna also came. I bought 1/4 size with ohtoro. It is available all this weekend.

New Screen works well?

We needed something to protect cold wind comes from outside.
I finally got it.
But a customer complained on Saturday.
We will see.

New Technology?

I bought a pan.
The reason I bought was New Technology.
It is said that non stick.
I tried many times these kind of non stick pan.
But top coating comes off in -4 months.
Then I buy new pans every 3-4 months.
We will see how long last.

Something nice

I made a togo for a customer.
She called me around 3pm. She wanted to pick up at 4:30pm.
And 20 ngiri sushi and 2 rolls but budget was $60.
I said I understood , and I made very close amount.
I imagined the scene behind her on the phone.
A baby was crying. She wanted to go out but there was no baby sitter. So they decided to order togo.
I cab support her.
I did not donate any money for Haiti nut I like this kind of story. This plate of $60 is not bad at all.

This really works.

This is attic at my restaurant.
We've been struggling with cold weather.
I finally found a solution.
It took 7 hours today. I came to the restaurant at 10am.
But this insulation really works.
It is not cold anymore. We made it.
I am thinking do this at my home.
How much is the cost? The floor is 1300sq ft. And I will pay $1500.
It is easy to make and pay $1500. But it is not easy to listen complains.

Snow at midnight

I got home around 11:00pm.
We almost closed the business but opened until 10pm.

Someone needs to open the business and take care of customers.
Niko told me when I was at Bluepointe.
I still remember this word and do it.

We just changed candle holder from clear to red. And I went to Costco and bought 2 dz of rose.
So, we are ready for it.
But it was snow and I spent many hours at outside and remove snow to the edge.

Japanese Curry

Java Curry
The name of Java comes from Java Island,Indonesia. Actually, they do not have curry there. I googled and found House Foods which is a maker of this curry.
It images spicy Southern Island.
So, this curry must be spicy.

Vermont Curry
You know the state of Vermont. Vermont was famous for honey and apple. This Vermont curry contained honey and apple.
But, maple syrup is more famous than honey.

Both are instant curry mix, just like hamburger helper. Saute meat, onion, carrot, potato and add water then add this curry mix. You can make Japanese curry in 30 minutes.
We Japanese like curry and rice. I have this on the menu.
Some people do not know about this popular curry.
I actually made this curry for omakase last week. The guy ordered omakase did not like it. And he posted Yelp. "I got worst omakase." And he gave us 1star. People need to know diff rent culture and judge, Sushi is our culture but curry is also our culture.
Many people expect toro,hamachi and maguro for omakase. But people need to try something they do not know. Am I right?

Americans like this way of ika, squid.

Do you like ika, squid or calamari?
Japanese like it.
Americans like fried calamari but most of you do not like sushi calamari.
The reason is very simple. It is chewy, no fat.
I gave this to Mike Mills on Monday night. He ordered again.
I sliced ika thinly and tied with shiso leaf and put ume, pickled plum paste.
I asked him not using soy sauce.
Then I asked my fiends on Tuesday night. They loved this way.
You need to change your life sometimes. It is same as sushi. You need to change your orders sometimes. You might open the new door. Good luck!

It's Surprise! Bluefin tuna

This is a kind of OMG. How come? Anyway, I got blue fin tuna. I do not remembered when was the last time I got it.
This might be the last one. I sent you e-mail letter this week. They are going to have a meeting and will ban to catch blue fin tuna. Blue fin tuna is in danger.
Japan is opposing this action but will be ban.
So, we have to eat this last delivery. I ordered a lot because of Valentine Week.
Red meat tuna, chutoro both are good.

Tomato soup is my miso soup?

I love tomato soup because I am 10% Italian. Yes, it is true.
I love Italy and love something made in Italy.
This pot is at my home.
I make tomato soup at my home. I eat it for breakfast or lunch.
I add after eat and keep it almost 1 week.
Hot tomato soup is really good in cold winter.
I make broth with bacon but use OX tail sometimes.
Then I add carrot, cabbage, onion, zucchini, potato, kabocha squash and more.
I hate salad but can eat warm vegetables. I just wonder why people eat cold salad in cold winter. It make body cold. We should eat warm food in winter.
Anyway, this is the only way to eat vegetables for me. Tomato is good and vitamins are still effective even make it hot. many vitamins break when they make hot. But ricopin of tomato does not break in hot. That means I can take 100% of good things from tomato.
Why don't you make your own tomato soup at your home.
It is easy and can save for a while.

Ramen Noodle

I am trying ramen.
I think ramen comes from Chinese. But Japanese arrange very well, it is localized.
Gyoza dumpling is same thing. It is from Chinese.
Many Japanese soldiers went to China and ate.
They brought back to Japan after war and started to make it as Japanese version.
I wanted to make with OX tail broth and made it. It did not have punch. So, I added pork legs and did not taste yet.
I will make it on Monday and approve it by myself and start to sell as specials.
I tested last week a few and got good response.
Ramen is already popular in NYC and LA area. We had a first ramen restaurant in Atlanta last year. But that one was Korean owned. Many Japanese restaurants serves it but still ordinary.
I want to beat them with good soup.

Bistro Niko

I went to Bistro Niko with friends.
It was slow night because of Super Bowl Sunday.
We actually arrived there at 5:30pm and left 7:00pm.
It was OK meals. Some dishes were salty.
The price was very reasonable.
The best way here is 1 drink (around $6-7) and skipping appetizer, taking entree only. So, you spend less than $30.
We spent $330 with 5 adults and 2 kids. This is not bad.

Pickles from Japan

Suguki (left) from Kyoto.
Suguki is radish group. But this pickle is trunks and leaves.
There is no artificial flavor, no color.
Suguki is made with lactic acid, and this lactic acid can fight against cancer.
It also work in stomach and good for diet.

Hinona tsuke(right) from Shiga, North of Kyoto.
Hinona is also Kyoto origin vegetables as Suguki,
They use rice east when making pickles. It is light acid flavor and tasty.

Both pickles come from Japan directly. We have so many pickles in Japan and have no idea how many.

Nore Sore

What is this? Nore sore is sea eel baby.
The color is clear and can see eyes.
Nore sore is available from early spring to summer.
The best way of eating is sunomono, marinated with vinegar or sushi.
It has unique texture. We sometimes eat live nore sore and called dancing eating.
The live nore sore dance in the mouth and swallow. I think they still alive in the stomach for a while.
It is fun to try new fish.

Roses from Costco

Did you listen Clark Howard Show yesterday?
He was talking about Valentine's Day.
Costco sells 2 dzns of roses at $15.99. But they will change the price and reduce to half portion.
It will be $19.99 and 1 dozn.
He buys roses for wife but buys 1 week earlier than the day.

I got tuna.

It's been a long time to get good tuna.
Chinese New year is coming soon. It means fishermen need to go home and who catch tuna.
And winter time is always hard to get.
If I get this kind of tuna once in 2 weeks, it is good.
This tuna is available until Wednesday.

He got a friend.

I just got a new friend from Africa.
One of our regular customer went to Africa. Actually he and his wife goes maybe 2 times a year.
I got a hippo last year and an elephant in January.
I have so many tiny gifts on the sushi bar wall.
