From Afghanistan


This is captain Neese, USMC.
He is one of my customer's son.
I think he went to Iraq last October.
His farther told me tonight. He went to Iraq, Philippine, Okinawa and moved to Afghanistan.
This photo came from Internet. He is at border of Pakistan.
There is a message " We look forward to dining at Taka together."
He will be back in next July.
A bad news from CNN. 58 American soldiers died in October so far.
he need to be survive and stay safe place. I pray for him.

Good tuna, long time no see!

I don't remember when was the last time that I got good tuna.
I believed it was 3-4 weeks ago.
This big eye tuna is the best of October.
It was stomach side and came with oh-toro.
It is available for next few days.

Fish delivery of this week
Tuna supply is not great. I have not received good tuna for 3 weeks. It is OK and not bad. Live scallop is not coming today. Japanese fish delivery is same as usual.

Poor Japanese?
Japanese government released a new data.Poverty rate is 15.7% in 2006. This number is 0.8% up from 2003 and the highest number since 1997. Also kids poverty rate is 14.2% and 0.5% up.According to OECD data, Mexico is the top and 18.4%, Turkey is 17.5%, United State is 17.1% . These are top3. The lowest is Denmark and Sweden. It is only 5.3%.It was all middle class before but not anymore. It is getting approaching to US style.
Green Tea works for Influenza
Catechin in green tea works for new influenza. This is from Tokushima University in Japan.It is known for green tea has antiviral effects. But it is proved the first time.You can drink green tea and also gargling with green tea works.This is my research and oolong tea has same effects. I like oolong tea and drink every day. Anyway, tea neutralizes fat in stomach and prevent obesity. If you take tea, you go to bathroom more often. It means all bad things come out from your body. It is very hard to explain and translate this in English and sorry for that. But look at me. I am very much healthy. My Japanese friends always say that I don’t have any wrinkle on my face. I am 47 years old and no plastic surgery done ever. I like fruits and eat a lot. And I take tea every day. Obama declared H1N1 National emergency. So what? Is it because 1000 people died? 36,000 people died last year with normal influenza. 1000 is much less than this number. The important thing is not vaccine. It is making healthy and strong body and need to eat good food for that and exercise well. Stay away from junk food and eat vegetables and fruits every day. Go out at weekend and breathe good air from nature. There is not cost of that.
Please let me know if you are in trouble about your health condition and try to eat good food. I can fix it. Maybe, I need to start serving metabolic menu.

Sake tasting. It's fun!


We had Sake tasting last night.
It was a big night.
This time was the biggest tasting ever.
We had more than 30 people singed up and got 24 people.
5 sakes and 6 dishes were served. This time's winner was Koshino Yukiwariso, Snow Grass.
This is raw sake. Sake actually boiled 2 times. And this Snow Grass boiled 1 time only.
Sake was brought by Sake Story, Atlanta based Sake importer.
Tasting Sake were Tsukino wa (Moon ring), Shudo ( Way of Sake), Koshino Yukiwariso (Snow Grass), Gopuriki 50 (Field Crane), Yamahai (Old Mountain) and Chisui Kafu ( Elements) from left to right.
I made Yakibuta (Grilled and cooked pork, sliced), Beets and Vegetables Salad, Nanbanzuke( marinated fish), Crispy fried Bay Scallop, Aji Namerou ( Japanese Jackfish Salad with miso sauce) and Brown Rice Takikomi Gohan( Dashi cooked brown rice with vegetables, hijiki seaweed)
We will do it again in January. It's going to be 2010 Kick off tasting. We will serve gold leaf sake for your good luck in 2010 and more.

Genmai, Brown Rice

I started to eat Brown rice from Monday.
I eat for breakfast, lunch and dinner. All meals are brown rice.
I try it 1 month and see my body.
Brown rice is not brown, beige. It is just between white rice and rice with crop.
We normally eat core part of rice. But it means all good parts are gone.
Brown rice's fiber is 2 times larger than white rice.
And has vitamin E, B and iron and more.
The problem is hard and need to chew well.
But chewing is very important. It stimulate brain. and help developing of growing jaw.

Why Brown-But Not White-Rice is One of the World's Healthiest Foods
The difference between brown rice and white rice is not just color! A whole grain of rice has several layers. Only the outermost layer, the hull, is removed to produce what we call brown rice. This process is the least damaging to the nutritional value of the rice and avoids the unnecessary loss of nutrients that occurs with further processing. If brown rice is further milled to remove the bran and most of the germ layer, the result is a whiter rice, but also a rice that has lost many more nutrients. At this point, however, the rice is still unpolished, and it takes polishing to produce the white rice we are used to seeing. Polishing removes the aleurone layer of the grain-a layer filled with health-supportive, essential fats. Because these fats, once exposed to air by the refining process, are highly susceptible to oxidation, this layer is removed to extend the shelf life of the product. The resulting white rice is simply a refined starch that is largely bereft of its original nutrients.
Our food ranking system qualified brown rice as an excellent source of manganese, and a good source of the minerals selenium and magnesium. The complete milling and polishing that converts brown rice into white rice destroys 67% of the vitamin B3, 80% of the vitamin B1, 90% of the vitamin B6, half of the manganese, half of the phosphorus, 60% of the iron, and all of the dietary fiber and essential fatty acids. By law in the United States, fully milled and polished white rice must be "enriched" with vitamins B1, B3, and iron. But the form of these nutrients when added back into the processed rice is not the same as in the original unprocessed version, and at least 11 lost nutrients are not replaced in any form even with rice "enrichment."
Here are some of the ways in which the nutrients supplied by brown rice can make an important difference in your health:
Manganese-Energy Production Plus Antioxidant Protection
Just one cup of brown rice will provide you with 88.0% of the daily value for manganese. This trace mineral helps produce energy from protein and carbohydrates and is involved in the synthesis of fatty acids, which are important for a healthy nervous system, and in the production of cholesterol, which is used by the body to produce sex hormones. Manganese is also a critical component of a very important antioxidant enzyme called superoxide dismutase. Superoxide dismutase (SOD) is found inside the body's mitochondria (the oxygen-based energy factories inside most of our cells) where it provides protection against damage from the free radicals produced during energy production.
Women Who Eat Whole Grains Weigh LessA study published in the American Journal of Clinical Nutrition underscores the importance of choosing whole grains such as brown rice rather than refined grain, i.e., white rice, to maintain a healthy body weight. In this Harvard Medical School / Brigham and Women's Hospital study, which collected data on over 74,000 female nurses aged 38-63 years over a 12 year period, weight gain was inversely associated with the intake of high-fiber, whole-grain foods but positively related to the intake of refined-grain foods. Not only did women who consumed more whole grains consistently weigh less than those who ate less of these fiber-rich foods, but those consuming the most dietary fiber from whole grains were 49% less likely to gain weight compared to those eating foods made from refined grains.
Brown Rice is Rich in Fiber and Selenium
For people worried about colon cancer risk, brown rice packs a double punch by being a concentrated source of the fiber needed to minimize the amount of time cancer-causing substances spend in contact with colon cells, and being a very good source of selenium, a trace mineral that has been shown to substantially reduce the risk of colon cancer.
In addition to supplying 14.0% of the daily value for fiber, a cup of cooked brown rice provides 27.3% of the DV for selenium, an important benefit since many Americans do not get enough selenium in their diets, yet this trace mineral is of fundamental importance to human health. Selenium is an essential component of several major metabolic pathways, including thyroid hormone metabolism, antioxidant defense systems, and immune function. Accumulated evidence from prospective studies, intervention trials and studies on animal models of cancer has suggested a strong inverse correlation between selenium intake and cancer incidence. Several mechanisms have been suggested to explain the cancer-preventive activities of selenium. Selenium has been shown to induce DNA repair and synthesis in damaged cells, to inhibit the proliferation of cancer cells, and to induce their apoptosis, the self-destruct sequence the body uses to eliminate worn out or abnormal cells.
In addition, selenium is incorporated at the active site of many proteins, including glutathione peroxidase, which is particularly important for cancer protection. One of the body's most powerful antioxidant enzymes, glutathione peroxidase is used in the liver to detoxify a wide range of potentially harmful molecules. When levels of glutathione peroxidase are too low, these toxic molecules are not disarmed and wreak havoc on any cells with which they come in contact, damaging their cellular DNA and promoting the development of cancer cells.
Not only does selenium play a critical role in cancer prevention as a cofactor of glutathione peroxidase, selenium also works with vitamin E in numerous other vital antioxidant systems throughout the body. These powerful antioxidant actions make selenium helpful in the prevention not only of cancer, but also of heart disease, and for decreasing the symptoms of asthma and the pain and inflammation of rheumatoid arthritis.
Lower Cholesterol with Whole Brown Rice
Here's yet another reason to rely on whole foods, such as brown rice, for your healthy way of eating. The oil in whole brown rice lowers cholesterol.
When Marlene Most and colleagues from Louisiana State University evaluated the effects of rice bran and rice bran oil on cholesterol levels in volunteers with moderately elevated cholesterol levels, they found that rice bran oil lowered their LDL (bad) cholesterol.
The study, published in the American Journal of Clinical Nutrition, was divided into two parts. First, 26 subjects ate a diet including 13-22g of dietary fiber each day for three weeks, after which 13 switched to a diet that added defatted rice bran to double their fiber intake for five weeks. In the second part of the study, a randomized crossover trial, 14 subjects ate a diet with rice bran oil for 10 weeks.
While the diet including only defatted rice bran did not lower cholesterol, the one containing rice bran oil lowered LDL cholesterol by 7%. Since all the diets contained similar fatty acids, the researchers concluded that the reduction in cholesterol seen in those receiving rice bran oil must have been due to other constituents such as the unsaponifiable compounds found in rice bran oil. The scientists suggest that the unsaponifiables present in rice bran oil could become important functional foods for cardiovascular health. But why extract just one beneficial compound from brown rice when you can reap all the cardioprotective benefits supplied by the matrix of nutrients naturally present in this delicious whole food? In addition to unsaponifiables, this whole grain also supplies hefty doses of heart-healthy fiber, magnesium, and B vitamins.

Fish delivery of this week
It is as normal. I get Umadura-hagi, Gunther this Thursday. It is from Japan. I carried this fish last year. Gunther has very tasty livers and we serve it with sashimi.
The last week tuna was not great in weekdays but got good one at the weekend.
We have Sake Tasting on Wednesday and full of seats. 28 people will join this event. Thank you so much.

1, Do you like coffee?
This is from Preventing Choice Desease. Do you like blended coffee beverage? They researched 115 coffee shops. Coffee and tea by itself was not high calorie and was only 63kcal even it with milk and sugar. But blended coffee beverage is average 239kcal. And some big sized one is 860kcal. These sweet coffee are getting popular but very high calorie. You should use low fat milk, skim milk or choose small size. If you do jogging, you can spend 231kcal for 40 minutes of it. Blended coffee beverage is 239kcal. Now you know it is not easy to spend same amount of calorie.

2, You can do it by eating.
Have you ever heard of Designer food pyramid? I just read this kind of article. I have to show you this. Top rated foods for cancer prevention are garlic, cabbage, soy bean, ginger, carrot, celery and parsnip. And 2nd rated foods are onion, tea, turmeric, brown rice, orange, lemon, grapefruits, tomato, egg plant, bell pepper, broccoli and cauliflower. The 3rd rated foods are melon, basil, tarragon, oregano, cucumber, rosemary, berries, potato and rye.

OX tail Vegetables Soup,my favorite lunch

I like this and can eat everyday.
I use ox tail. I like gelatin and meat around bone.
And 8 different vegetables are in it.
I don't like fresh salad much. Especially, I don't eat in winter.
So, how can I eat vegetables? It is from soup.
I just read an article about cancer prevention.
You might know designer pyramid.
And cancer prevention food are garlic, cabbage, soy bean, ginger, carrot, celery are top rankings.
And next rankings are onion, tea, brown rice, lemon, grapefruits, tomato, bell pepper, egg plant, broccoli, cauliflower.

Guess? What kinds of vegetables are in my OX tail soup? I use garlic, onion, bok choy, celery, tomato, broccoli, carrot, ginger. See, it is perfect soup for cancer prevention. I should add cabbage next time. And kelp? You see a big green brown piece. It is kelp. Kelp can make great broth and eatable. This soup is on the menu.

Suzuki, Seabass from Japan




I got Suzuki, Seabass from Japan. Many people think is this same as Chilean Seabass. It is not same kind of fish. Chilean Seabass is make up name. I for got a real name . It is just like white tuna. That is not tuna.
Anyway, the meat is close to snapper. The right picture is Black porgy(top) and Suzuki(bottom).
I thought it had more texture but actually not.
You can try this weekend through Tuesday.

It is same as last week. Tuna? I have big eye tuna for today but no idea for this week.

If you are women and drink a lot, you are high risk of breast cancer.
This is from Cancer research center in Aichi, Japan. It is more problem after menopause. The maximum risk is 174% higher than non drinkers. They say it is common in US and Europe. But anyway, ladies should drink alcohol nicely. Normally Japanese women’s risk of breast cancer is lower than American women. It is because we eat soy bean more than you. Tofu, edamame, miso soup contains isoflavones and it work for breast cancer prevention.

Tuna farming is growing.
This is from Japan. It is because of fishing regulation and more, tuna farming business is growing recently. There are 70 places in Japan now and this number is 50% higher than 2 years ago. Hamachi, yellow fin is famous for farming but the price is low and farmers are switching to tuna business.

How to find good sushi chefs




What is the difference of 2 pictures?
This is a key of finding good sush chefs.
Soto, Soto hiro Kosugi told me this a long time ago.
Both pictures are from a sushi chef side. Just imagine your sushi chef is standing below the pictures.
The difference is water and wasabi positions. He told me that chefs who learned sushi in Japan, they do the way like right picture.
But someone places water closed to chef. Those people learned sushi here in the USA.
And bad chefs use a lot of water to make sushi.
Rice sticks on hands always. So, we need to use water for that. But this is the key. If they have enough skill, they don't use it much.
This is the first step.
And you see how chefs make sushi. If they use a lots of water to make sushi, you need to be careful.
It is very easy to find good sushi restaurants and sushi chefs.

You can google, you can go Yelp.com, you can go City Search.com, you can go to Yahoo.com or AOL.com and more.

Then you might find it. But that's not enough.
Just order tamago, egg omelet before you order anything.
Then, you can tell good or not.
Tamago is very important item to judge good sushi restaurants.
Some sushi chefs cannot make this. Some restaurants buy frozen tamago.
I think only 5 % of sushi restaurants in the USA make their own tamago.
But anyway,you have to know real tamago taste.
If you eat real one, you can tell good or not.

Good salmon and Bad salmon

Hey, Guys Taka's Fish Class.
Can you tell which one is good and which one is bad?
It is easy to see the colors.
Clear color salmon is fresh arrived and unclear color salmon is frozen.
I got this salmon for sample but did not want to use anyway.

I made a piece of nigiri sushi with bad one. It was very bad.
If you go to country, they use these kinds of bad one.
It is not smoked salmon but color is very similar.

Mike Mills


You might know Mike Mills. He used to play with REM.
He played with U2 last night at GA dome.
It was a surprise visit.
He was born in CA and moved to Macon GA when he was young.
Mike was very polite and could speak some Japanese.
Also, he ordered very nice dishes.

A bad review

Well, I was excited to finally eat sushi that day, the restaurant opens at 5:30 however I went around 3 and it was closed... Well, I decided to drive around town wait it out, and come back. (Anything for sushi right?)I took a look a their menu, and I liked the sound of one of their rolls, however, preferred crab meat over scallions. When the waiter took my request to make the switch I could overhear the "chef" talking loudly saying "go tell them crab doesn't match with the roll."Control freak anyone? Who said everybody had the same taste buds? I love dark chocolate, however someone else might prefer milk chocolate over dark. Anyways, I explained to the waiter, "I've had this roll before back in Miami, and I'd like to keep the crab meat instead, I don't like scallions."My friend and I were the first ones inside the restaurant, everybody else who got seated after we did got served.Not to mention the vibe was strange, the service was lousy, and well, the attitude coming from the chef himself won't convince me returning back to this establishment.

Yes, I said that. Do yo think crab and mango match well? I do not think so.
So, I said that. But she said she ate in Miami and I made it.
I need to tell my opinion first. And the customer agree with that, it is OK. She wanted us to make that and we made it.

But what is Miami style? It is mixture of everything. Sometimes I say No. Sometimes I cannot afford about crazy things. (I don't think this crab and mango mixture is not much crazy.)

Customer is King and Queen but I need to tell something from pro's opinion otherwise sushi lose their way and go far from the main street. Or it is gone from the main street already?

Yakibuta, Grilled and Cooked Pork


This is the first time to make yakibuta.
Yakibuta is Chinese food but I like.
I don't eat much of it. I just like to eat 5-6 slices.
That's enough portion for me.
I marinated pork with soy sauce, sugar, green onion, ginger, sake, salt.
Then I grilled it and cooked with soy sauce base broth with Chinese rice wine and some spices.
It was not bad for my first time.
I want to serve this kind of small tapas portion appetizer more. It is because of bad economy and people don't want to spend much money.

Ika, Squid or Calamari

I show you Ika.
A whole body one is called yari-Ika. And meat is left side.
The other one is called mongo-Ika. You see the cut lines on surface of fish.
The meat is thicker than yari-Ika.
We buy frozen ika from Indonesia.
I peel skin after defrost and clean it. It is good for sashimi and sushi.
Mongo-Ika is ready to eat style.
This is made in Japan. They don't call this fish category anymore.
The reason is they put something flavor and taste. So, this mongo-Ika is food, not fish.
I normally make sashimi rolled with shiso leaf. Or I make it with natto, fermented soy bean.
I think there are more than 50 kinds of ika in the world. And Japanese and Korean like to eat Ika. Ika is chewy and hard to eat. But we like that texture.

Fish of this week
Some problem showed up with scallop. We carry live scallop from Boston and frozen one from Japan. This season’s Japanese scallop supply was over. And new harvest is coming soon. But the size is smaller than last harvest. Our supplier told that scallop did not grow well. So the price is same or high and size is small. I use bay scallop for rolls and this is ok because we normally chop it and use. And we can keep same price.
Fish delivery schedule is same as last week.

A: Sake tasting
We have Sake tasting on 21st Wednesday. There are several seats are available.

B: Sushi Day
Many people know this. Sushi Day is coming. It is November 1st and Sunday. I am thinking of opening Sunday or do it on 2nd Monday.
We do 30% off from your bill this year. You get 30% of amount coupon this time. You can use it by the end of year. That means same as discount, right?

C: Wild fire in CA again?
Yes, it is burning now. I cannot believe this. I always say send troops to CA and extinguish the fire. Troops need to protect people live in America. I think they work for the nation but some people are on fire. They do not care about Afghanistan; they care about their homes and lives.

D: What we can do for disaster?
More than 200 people died in India because of heavy rain. Maybe 4000 people die in Indonesia because of earthquake. How about Samoa? A huge Hurricane hit Philippine and Taiwan and it is approaching to Japan. So many things are going on. We have to do something for the future. Ice is melting in North Pole and everywhere. What e can do for these things? We have to change our lifestyle. We need to change Americans way of Lifestyle. Living in a big house and use a lots of electricity, gas, water and more. Driving a big engine car and exhaust tons of CO2. This is our suicide. We are choking our neck. It will be tight a little by little. More weird weather changes are coming near future. Then we will know it is bad that we are doing. I do not have a good answer for this. But I am working for being nice for nature, our Earth.
We can do so many things around us. One of them is going to bed early and save electricity, changing the setting of AC thermometer and reducing energy consumption.
