This week Fish
Tuna supply is same as last week. Cannot expect great one but can expect OK tuna. Uni is not coming for a couple of days because of bad weather in CA.
I just started Sayori, saury. This slender beautiful fish is in season.


Patio Special
We have Sangria for patio season. We do white, red and plum. You should try plum sangria. It is only Taka.
Yuzu sake is also available. It has a nice citrus flavor of yuzu.
Then I have Tuna poke for special. Poke is Hawaiian style tuna sashimi.
I use pineapple for sauce. It is popular and people love it.


March Sales is higher than last year.

One fine day, the God saw wolves eat baby sheep and felt bad. So, he pulled over the fangs and changed wolves to sheep. Sheep were having peaceful life. But a few years later, amount of sheep were increasing and strong sheep eat a lots of glasses in the field and weak sheep began to starve.
He felt bad for watching starving sheep. And he gave equal lands for sheep and fighting was over. But all of them became thin and weak and died. He could not expand land.
A new God showed up later. He did freedom against wolves and gave permission to catch sheep. He also gave them strong fangs and brain. The land became war zone. Strong wolves at weak sheep and they ate all of them. Then wolves started to eat each other. A few years later, a big wolf was standing a lone in the field.
So, this story ask you which one is better, capitalism or socialism. The first one is just like Karl Marx and the second one is like this country. I think we are going to modified capitalism in the future.
Obama tries to bring health insurance for everybody here in the country. Is this good or bad? Some people say “Why does government need to do so nice to all? Someone can afford and someone cannot afford. This is capitalism. “
Then other people say “ The job of government is support all the people here in the country. If they have troubles, they should help them. Everybody need to take equal opportunities. “ I was born in Japan and health insurance was there already. We pay high tax but can get good benefits. If you live in Canada, you need to pay 44% of income tax but can get great benefit. So which one is better for you? Some people refuse to pay insurance fee. “ I am healthy. I don’t want to pay insurance fee. So, give me money.” I think this bill will be rejected.

Hey, I just started these items in Japanese menu. Both are kinds of Izakaya food.
Izakaya, Japanese pub is getting popular here in US.
Basically, Izakaya menus are not healthy.
We go to Izakaya because reasonable and variety of dishes. We eat so many fried items Fried food stimulates our brain and ask us drink more beer then we get fat. It is OK once a week or every 2 weeks.
1, Shishamo Amazu -zuke, Cappeline marinated with sweet vinegar.
We like shishamo. This tiny fish has roe and can eat from head to tail.
I know some Americans hate see fish head. Normally, we don't waste much. Especially in case of small fish, we eat all of them. It might be tough item for normal Americans. But you can try.
2, Gyudon, Japanese beef bowl.
This is much much easier than shishamo. I like, you like, he likes and she likes.
Do you know sukiyaki? It is juts like that. I cook sliced beef and onion with soy sauce, sake, mirin and sugar. Scatter beef things on top of steamed rice. Then red ginger is great combination with beef. I don't make big portion. This is small and $5.00. Because, I want you to eat other items. If you go to Japan or CA, you can see YOSHINOYA. YOSHINOYA is gyudon special restaurant. They sell gyudon only. They have more than 1000 stores in Japan and open 24 hours. So you understand how Japanese like gyudon. This is casual Japanese food and no one dislike. I don't do that but many people like raw egg with gyudon.

Is it a promotion of competition that carries out tightening regulation of the difference correction or economic rationalization? This is our eternal problem. Rich people are getting more and poor people are stay there forever. It is called difference. It is very important issue in Japan and USA.

2, Yam potato or natto are getting popular in overseas.
Japan’s rate of food self-sufficiency is below 40% and we rely on food from overseas import. But some foods are getting popular in overseas. In Taiwan, Nagaimo, yam potato is popular. They use it for soup, juice. They create a new way of eating. Of course, they have Nagaimo but Japanese Nagaimo has a texture and food safety issue helps selling high price.
Natto is getting popular. People exchange the information through the internet. Some people use it for curry, mixing with cheese, topping for ramen noodle and more. Natto is fermented and great healthy food but hard to sell. But a exhibition in Germany last year, Natto roll, a kind of sushi was very popular. It took 10 years for tofu to get citizenship. Natto might takes 10-15 years. How about other foods? Scallop from Aomori is popular for French cooking in Europe and US, Mandarin orange is popular in US. Melon, apple, grape are popular in Asia and Middle East.

One of the best tuna in March

It is very hard to get good tuna this month.
I finally got a good one on Friday.
This big eye tuna is very good condition
There is nor problem until Tuesday.
Great tuna makes me happy and I can make my customers happy.
Spring Break? We don't have it. Just do it.

A Special for someone

He needs something special. He asked a waitress to make something special. He told her he liked uni, miruigai, ika.
I got a message.

4, Sweet shripm with uni
This is a parade of uni and that he wants.
I went to the guy's table. He was very happy.
I charged $50 for this plate. Is it expensive or Cheap?

Something about Sleeping
This is from CNN.
Americans are stressed over the economy.
A new poll finds that Americans are sleeping less because of economic stress and demands of modern life.
Our day seems shorter, schedules are crammed and precious sleep hours are sacrificed -- tossing, turning or working.
National Sleep Foundation's annual poll estimated that Americans get an average of about 6.7 hours of sleep during a weekday.
The annual Sleep in America poll estimated the hours of sleep have gradually decreased.
Over the last decade, the poll indicates that a growing percentage of Americans is getting less than six hours of sleep and the number of people who get eight or more hours is dwindling.
National Sleep Foundation poll People sleeping less than 6 hours: 1998: 12 percent 2002: 15 percent 2009: 20 percent People sleeping more than 8 hours:1998: 35 percent 2002: 30 percent 2009: 28 percent The findings echo a survey conducted by the American Psychological Association, which reported last year that 52 percent of 7,000 respondents were losing sleep at night from stress.
The mean hours of sleep on a weeknight dwindled from an average of 7 hours in 2001 to 6.7 hours this year, according to the Sleep Foundation's poll.
Centuries ago, people routinely slept eight to nine hours a day. But now, only about a quarter in the survey reported getting eight or more hours of sleep.
Doctors warn about the effects of sleep deprivation, such as car accidents, depression, anxiety and cardiovascular problems. Doctors recommend seven to eight hours a day. Schulman likened sleep deprivation to chronic alcoholism.

Something about Diabetes
We have 20millions diabetes patients here in US. This number is 7% of adult population. 73,000 dies with diabetes every year. Also it relates with 220,000 other diseases dying. Journal of the American medical Association’s research showed diabetes related with all kinds of cancers. If you are diagnosed as cancer and have diabetes, your risk of death is very high.
January 2009 issue of Neuropsychology says Mental processes decrease due to mild diabetes even when controlled severely.
So, diabetes makes brain’s mental function down, and increases risk of death. We need to be careful of these facts.
Eat good food for your health and do exercise, just do it.

Bigeye tuna


This is the tuna of this week.
Can you see toro? It is not much.
It is hard to sell in high price.
It was almost same tuna last week.
This is a kind of bad season for tuna.
But there is no choice for me.
As tuna meat, this is great.
I just read a CNN article.
1 out of 50 children in this country are homeless. About 1.5 M of children homeless live here.
And believe or not, GA is one of worst states.
And shooting again? Not much surprise anymore. I just thought how many people died.
We had a shooting last weekend, too. See, no surprise! It is very common. I feel bad.

This week Fish
Almost same as last week. Tuna supply is Ok and not great. All other fish are fine. Japanese Yen is coming back. It was 87 yen 3 weeks ago and was 98 yen last week. That means we don’t need to change price of sushi and other items using Japanese products.
I might do spring sake tasting at the end of month. Someone interested in it. Please let me know. I want to do with around 20 people.


Keys of Diet
It is getting warm and our clothing is thinner than winter. So, we see our body line very easily. You might go to beach soon. I show you the keys of diet.

1, The success of first key is continuing. Don’t stop, just do it.
2, Measure your weight everyday. Even if you don’t want to see, measure it.
3, Any good exercise? Walk everyday. This is the best. You don’t need to go to gym and need to buy a bicycle. Walking is free exercise.
4, Perfectionism cannot accept. Perfect calorie control, perfect exercise, perfect lifestyle ? It is impossible.
5, You have to declare in front of many people. You cannot escape after this. You have to do it , otherwise they say you are liar.
6, fast or cutting meal are not good idea. You have to eat 3 times a day. Of course, you can cut your snacks.
7, The equation of diet is to increase the consumption calorie more than the intake calorie. I can say less eat and more exercise.
8, 3months is a good span to do it. It is impossible in a week or 10 days.
I highly recommend natural diet, natural losing.
9. Reduce fried food. This is an example. Deep fried pork is 450cal. But sautéed pork is 300cal.. Which one is good for diet? Do you like French fry? Skip it and go to baked potato with no butter.

Fish supply is not bad. The last week’s tuna was OK for chu-toro and I could say B- rating. All other fish are good.

1, February Sales
It was good February. Our sales was 8% higher than last year. Thank you so much. I have no idea this month. But I try my best always.

2, Dow is lower than 7000.
NY Stock market is not doing great. So many things are going on. I knew that. What should we do? I give you the number from Japan. Tokyo market’s highest number was almost 40,000 and was in 1989 perhaps. Bubble economy busted after this. The number dropped to around 15000 and came back to below 20000. It was around 13000 last year and 7280 yesterday. So, If I say 40000 is 100, the current number is 18.2. If I apply this number to NY stock market, Dow might go down to 2457. Don’t be surprise, this is juts the number. We already lost 50% of value. I think 6000 is the bottom. It is not easy. We still don’t know the exit of a long tunnel. We can see the sign “ Exit is near future” but cannot see in front of us right now.

3, Lean from our history.
I bought several books were written about America. And we can learn from our history. What do you think of 12 years of Republican government from 1984 to 1996? Regan cut taxes and appealed “Strong America” and increased military expense. Actually tax cut was good for wealthy people and big companies. Middle and lower families lives didn’t get well and went down. Papa Bush succeed this line and the son did same way.
Do you know how many % of IRS revenue from companies? I have a data. It decreased a lots. In 1960, 3.8% from GNP and 1986 was 1.4% and 1990 was 1.7% . Instead of paying corporate tax, they bought corporate jets, paid high salaries to executives. And they didn’t spend money to capital investment. So what happened ? American companies lost their market share in everywhere and made many blue color out of job. Americans were still smart at that time and made money from financial market. It was good about 10 years and it was finished. What comes next? No more investment bank in the US. Banks need to be back to their primary business.
The book I read was published in 1994. And I am reading this in 2009. It is nothing old. Rich people get more rich and poor people get more poor. Many people cannot afford medical insurance, cannot send their children to college, the government is looking for small size and cut social welfare expense.
It is hard to translate but I am happy if you understand.
You might know this. It is from the politics of rich and poor by K. Phillips. He wrote this in 1990. [ Before, the sons of blue colors followed their fathers and went to work at factories. They make $13-$14 per hour. They become middle class. They buy a car and a small cottage near by lake. Later they can send their children to college]. This was a small American Dream but not any more. We don’t have middle here. And the funny thing is Japan is getting just like that.

4, Fruits and vegetables reduce the risk of pancreas cancer.
Let’s go back to healthy topics. Dr. Holly at University of California says “ If you eat a lot of fruits and vegetables, you can reduce 50% of pancreas cancer risk”. About 300,000 peoples die every year in this country and impossible to treat, most of them die in 5 years. In pancreas, there is a disintegration of an adjustment storing action, a detoxifying process, a red blood corpuscle disintegration, and alcohol that the digestion acts and is nutrient. I think pancreas is next section from small intestines and is just like recycle center in our body. Anyway, this research says carrot, yam potato, sweet potato, corn, pumpkin, onion, garlic, beans and fruits are good for pancreas.
Prevention is the best way for the medical care. Eat good foods always.
